Ingredients
This is a 5 ingredient almond flour chocolate chip cookies recipe and the main ingredients are
- Almond flour (blanched)
- Unsalted butter at room temperature
- Semi-sweet chocolate chips or dark chocolate chips
- Sugar
- Vanilla extract
This recipe makes eggless cookies without baking soda.
Instructions
Making eggless gluten-free cookies at home is a breeze. In a bowl take unsalted butter at room temperature.
Refrigerated butter can be softened in the microwave too but you need to be careful to not overheat it, or else the butter will melt.
A soft dough is made using all the ingredients and then refrigerated for some time. The dough is then divided into small balls and baked into cookies in a preheated oven.
Make cookie dough
With a hand blender and a whisk attachment, whisk the butter in a large mixing bowl until it becomes smooth. Now add the sugar and mix it on medium speed until the sugar and butter mixture becomes light and fluffy.
Add the almond flour, some vanilla extract, and a pinch of salt for enhancing the flavor. Mix gently with a spatula and then add the chocolate chips and mix well to form a soft dough.
Refrigerate the almond flour cookie dough for about 30 minutes to firm up. This helps in making the chocolate chip cookie dough balls
Bake cookies
Preheat the oven to 350°F. Line a baking tray with parchment paper. Divide the dough into twelve equal parts and make dough balls and flatten it slightly.
Bake the cookies in the preheated oven for about 12 minutes. The edges of the cookies will start turning brownish.
Once the cookies are baked, remove the tray from the oven using oven mittens and allow it to cool down. The cookies will be very soft in texture at this point and must be allowed to cool down or else they can break.
Variations
To make vegan almond flour chocolate chip cookies, replace butter with vegan butter and vegan chocolate chips.

Serving suggestions
These soft almond flour cookies are a treat for any occasion. Enjoy these with a glass of milk or just as is. You can also apply some whipped cream on top of it.
Equipment
The butter and sugar can be whipped using a whisk, hand blender with the whisk attachment, hand mixer, or a stand mixer with a wire attachment. I have used the Cuisinart hand blender with the whisk attachment. For baking, you can bake them in the convection oven on a baking sheet.
Storage
These homemade almond flour cookies will stay fresh for about two weeks in an airtight container or a cookie jar. Just ensure that they cool down completely before you store them otherwise they will become soft and soggy due to the moisture.

- Add vanilla extract, a pinch of salt and almond flour and mix well with a spoon
- Add chocolate chips and mix gently.
- Refrigerate the mixture for about 30 minutes.
- Preheat oven to 350° F
- Make 12 balls, flatten them by pressing slightly and place on a parchment paper lined in the baking tray.
- Place the baking tray in the oven and bake for about 12 minutes or until edges are brown.
- Remove the tray from the oven and allow the cookies to cool down
Notes
- It is best to weigh the almond flour with a digital food scale for consistent results.

Yes, it is for 1 cookie. The nutrition calculation is just an estimate. Almond flour, butter, and chocolate chips are the 3 ingredients that are high in calories. You can try to use low-fat butter and reduce the quantity of chocolate chips to get lower calories. Optionally you can also make smaller size cookies, that way calories per cookie will be less.

I have not tried with ghee but it should work. Use the same amount of thickened ghee as butter, not melted ghee.
