Sabudana vada is a popular Indian snack. It is served with evening tea and is great for appetizers for parties or any special occasion. Rinse the sabudana thoroughly until the water runs clear. Soak it with water, water should be above the sabudana level.
After about 8 hours, the sabudana will soak up all water and will increase in volume.
Make sabudana tikki (patty)
Add all the ingredients - potatoes, cumin seeds, crushed peanuts, serrano peppers, salt, and sugar.
Mix everything with hands and mash well.
Take a small portion, roll it in your palm to make a smooth ball, and then press it to make a vada (patty) about 2 - 3 inches in diameter.
Repeat the above step for the remaining mixture.
Air fry sabudana vada
Preheat the air fryer to 390°F for 2-3 minutes.
Brush the vada with oil on both sides and place it in the preheated air fryer.
Air fry for 10 minutes at 390°F.
After 5 minutes flip the vada and air fry for the remaining time.
They will look fluffy and slightly golden brown.
Take them out of the air fryer with the help of kitchen tongs.
Deep fry sabudana vada
Heat oil in a pan on medium-high flame, the oil should be at least an inch in depth.
Drop a few sabudana tikkis in the hot oil and deep fry until golden brown on both the sides.
Place them on a paper towel after removing them from oil to get rid of excess oil.
Notes
Sabudana vada can be made in advance and frozen for a couple of months. Using parchment paper between layers will help them not sticking to each other.
Frozen sabudana vada can be thawed in the microwave and cooked in the preheated air fryer at 350 °F for 5 mins on each side.
