Cut the avocado into halves, and remove the seed and the skin.
Blend the avocados, sugar, milk, lemon juice, and salt in Vitamix into a smooth puree, and the sugar is dissolved. (Gradually increase Vitamix speed to 6-7)
Transfer the mixture to a bowl and add the heavy cream and vanilla extract. Mix with a whisk or spoon.
Refrigerate the mixture for about 30 minutes before churning.
Stir the mixture and transfer it to the ice cream maker bowl.
Churn the mixture for 25 minutes.
Transfer the avocado ice cream to a freezer-safe container.
Freeze the ice cream for about 5-6 hours before serving.
