Instructions
Make cookie dough
Whip the butter and sugar in a stand mixer using the wire attachment until light and fluffy. (This can take 5 minutes).
Add salt, vanilla extract, and fresh milled flour, and mix well with the flat beater attachment.
Add the chocolate chips and mix into a soft dough.
Chill cookie dough
Chill the cookie dough in the fridge for 30 minutes.
Pre-heat oven
Preheat oven to 350°F with the rack at mid level.
Bake cookies
Make balls of about 38-40 grams each, flatten them by pressing slightly and place them on parchment paper in a baking tray.
Space them out at least an inch apart.
Place the tray in the oven and bake the cookies for about 12 minutes at 350°F until the edges start turning golden brown.
Allow the cookies to cool down a little and then transfer them onto the cooling rack.
Notes
For consistent results, weigh the flour instead of measuring by a cup (click on "metric" units under the ingredient list)
