
If you are into milling your own flour, these fresh milled flour banana muffins are must try! They are perfect for breakfast, snack or dessert and a great way to use up ripe bananas.
They are easy to make fresh milled soft white wheat flour and you can add chocolate chips or nuts like walnuts and pecans. They turn out soft, moist, and the nuts add a crunch.
Ingredients
To make this easy fmf banana muffin recipe, you will need ripe bananas, ones whose skin has turned dark or has a lot of dark spots.
I have used fresh milled soft white wheat flour and do not sift it. So it includes all the fiber from the bran. Other ingredients are almond milk, sugar, oil, vanilla extract, and vinegar along with some baking soda and baking powder as a leavening agent. I have also added chopped walnuts.

Instructions
In a large mixing bowl, mash the ripe bananas with the help of a fork. Then add all the wet and dry ingredients in the bowl except the walnuts.
With the help of a whisk, mix all the ingredients until everything is well mixed. This can take about a minute. Add the walnuts and fold them gently with a spatula. Pour the batter into muffin molds lined with muffin liners to â…”rd capacity each.
Place the muffin tray in the preheated oven at 350°F. Bake them for about 25-28 minutes at the temperature of 350°F or until they become light golden brown from the top.
You can insert a toothpick at the center of the muffin to check for doneness. If it comes out clean, banana muffins are done, or you can bake them for a few more minutes.






Substitutions
- Milk - use any plant-based milk to make them vegan or you can use regular milk.
- Brown sugar - use brown sugar instead of cane sugar.
- Nuts - use pecans instead of walnuts.
Variations
- Nuts - add some chocolate chips or pecans instead to make fmf banana chocolate chip muffins.

Equipment
I use the Nutrimill Harvest mill to mill the soft white wheat berries on the finest setting.
To make the fmf banana muffin batter, a whisk helps in mixing well. You can also use a hand blender with a whisk attachment or a hand mixer.
I have used muffin tray with paper muffin liners, however reusable silicone muffin holders with tabs can also be used instead.
Storage
Fresh milled banana muffins can be stored at room temperature for 3-4 days in an airtight container.
Top tip
To check if the muffins are done, insert a toothpick at the center of the muffin and see if it comes out clean, that means it is well cooked. Else you can bake them for a few more minutes.

Wet ingredients
- 3 Bananas (medium size, ripe)
- ½ cup Almond milk (or any plant based milk, or regular milk)
- â…“ cup Oil
- ½ teaspoon Vanilla extract
- 1 teaspoon Vinegar
Dry ingredients
- 2 cup Soft White Fresh Milled Flour (240 grams)
- ¾ cup Organic cane sugar
- ½ teaspoon Baking Soda
- ½ teaspoon Baking powder
- Pinch of Salt
Add-ins
- ¾ cup Walnuts (chopped)
Instructions
- Preheat oven to 350°F while you work on the mix.
- Peel the bananas and put them in a large mixing bowl.3 Bananas
- Mash them with the help of a fork.
- Add all the wet and dry ingredients, except walnuts, to the bowl.½ cup Almond milk, ⅓ cup Oil, ½ teaspoon Vanilla extract, 1 teaspoon Vinegar, 2 cup Soft White Fresh Milled Flour, ¾ cup Organic cane sugar, ½ teaspoon Baking Soda, ½ teaspoon Baking powder, Pinch of Salt
- Mix everything well with a whisk.
- Add the chopped walnuts and mix well with a spatula.¾ cup Walnuts

- Bake in the oven for about 25-28 minutes at 350°F or until the top is slightly golden brown.
- Insert a toothpick at the center of the muffin to check for doneness. If it does not come out clean, then bake for a few more minutes.
- Remove the muffin tray from the oven and allow them to cool down for 15-20 minutes before serving.
Notes
- It is best to weigh the flour using a digital food scale.
- Add-ins - add some pecans or chocolate chips or skip them altogether.
