Dabeli or kacchi dabeli is an Indian street food originating from Gujarat. It is a delicious savory, spicy, sweet, and slightly tangy appetizer that can be served as a tea time snack and is perfect for parties, potlucks, and other special occasions. For potato stuffing
4mediumPotatoes(about 500 grams, boiled, peeled, cut into large pieces)
Once oil is hot, add the potatoes, dabeli masala powder, and salt.
Mix well and mash it with a potato masher.
Add water and optionally some lemon juice and continue mixing and mashing until there are no lumps.
Turn off the heat and transfer the potato mixture into a tray.
Spread it evenly to make about 1 centimeter thick layer.
Garnish the potato mixture
Sprinkle the onions, masala peanuts, nylon sev, pomegranate seeds and chopped cilantro evenly on top of the potato mixture.
Assemble dabeli
Slice the dinner rolls on three sides leaving one side attached.
On the inside, apply garlic chutney on one side and sweet tamarind chutney on the other.
Take about 2-3 tablespoon dabeli stuffing from the tray and place it inside the dinner roll and press it gently.
Dip the roll into the nylon sev on all three sides to allow some sev to stick to the filling. This is optional.
Continue with all the dinner rolls in similar way.
Notes
To cook potatoes in the Instant Pot:
Put 1 cup water in the instant pot container.
Place a trivet in the container and put rinsed potatoes on the trivet.
Lock the lid with the release valve in the sealing position.
Start the Instant Pot on high pressure/manual mode for 12 minutes.
Allow the pressure to release naturally for 10 minutes and then release any additional pressure manually by turning the release valve in venting position.
Once the silver pin drops, open the lid and remove the potatoes.
Let them cool down then peel and cut them into large pieces.
Substitutions:
Grapes - instead of pomegranate seeds, you can use chopped grapes.
