Dabeli is an Indian street food originating from the western part of India, from state of Gujarat. It is also known as kutchi dabeli or kacchi dabeli. It has a unique sweet, spicy, and slightly tangy taste. It is perfect for tea time snack or served as a party food. It is a crowd pleaser dish and also perfect for office parties.
The ingredient that gives dabeli its unique taste is the dabeli masala powder which is easily available in Indian grocery stores. You can also make it at home. Here is a recipe for homemade dabeli masala powder.

Making Kutchi dabeli recipe at home requires potatoes, you can use any type of potatoes. The main ingredient that gives dabeli its taste is the dabeli masala powder which is easily available in Indian grocery stores.
Other items like nylon sev or bhel sev, spicy masala peanuts, tamarind chutney, and spicy garlic chutney are easily available in Indian grocery stores. Pomegranate seeds add some sweetness and can also be substituted with grapes.
To make masala peanuts in air fryer at home, mix some oil, salt, and red chili powder with peanuts and roast them in the air fryer for few minutes. You can also make the sweet tamarind chutney at home.
Cilantro, lemon juice, and optionally shredded coconut are added for more flavor. The potato filling is stuffed into dinner rolls or burger buns.
Instructions
To make dabeli, boil the potatoes first. You can cook them in the microwave or if you are making a large batch, you can pressure cook the potatoes in the Instant Pot. Let them cool down and then peel and cut them into large pieces.
Heat a large pan on medium heat on the stovetop. Add some oil and once the oil is hot, add the potatoes, dabeli masala powder, and salt. Mix well and use a potato masher or spatula to mash them until no lumps are left. Add a little water to to adjust the consistency and ensure that the potatoes are not sticking to the bottom of the pan. Optionally add some lemon juice.
Step 1: Gather all ingredients for dabeli stuffing.
Step 2: Add spices to mashed boiled potatoes.
Turn off the heat and transfer the potato mixture to a serving plate once it cools down a little bit. Press it with a spatula to spread it evenly. Garnish it with toppings like masala peanuts, some chopped onions, pomegranate seeds, nylon sev, and chopped cilantro. Optionally you can sprinkle some grated fresh coconut.
Step 3: Spread the potato mixture in a tray.
Step 4: Add sev, peanuts, pomegranate seeds, and cilantro.
The next step is assembling the potato filling into the dinner rolls called pav. Slice the dinner rolls and then spread the sweet tamarind chutney on one side and garlic chutney on one side. If you don't want it spicy, you can skip the garlic chutney and use sweet chutney on both the sides.
Place spoonfuls of the potato filling on one side of the dinner roll and spread it well. Close the roll and then dip it on all open sides into nylon sev. Optionally apply some butter on the top of the pav and toast it slightly on a hot skillet.
Step 5: Apply chutneys to the dinner rolls.
Step 6: Apply the stuffing.
Substitutions
- Grapes - instead of pomegranate seeds, you can use chopped grapes.
- Garlic chutney - use cilantro green chutney or red chili sauce instead of garlic chutney.
- Burger buns - dinner rolls or burger buns can be used for making dabeli.
Variations
- Spicy - add more dabeli masala or red chili powder while cooking or apply more garlic chutney while serving to make it more spicy.
- Sandwich - stuff the filling between two bread slices and grill them by applying butter on each side.
- Cheese - sprinkle some grated cheese on top of the stuffing while making the dabeli buns.
- Kid-friendly - you can skip the garlic chutney and use sweet chutney on both the sides to make it less spicy.
Equipment
Making kacchi dabeli recipe does not require any special equipment. You can make it on the stovetop in a pan. For boiled potatoes, you can either pressure cook them in the Instant Pot or cook them in the microwave.
Storage
If you have any leftover dabeli stuffing, you can store it in the refrigerator well covered. You can also plan ahead of time for an event by making the dabeli stuffing in advance and storing it in the fridge in an airtight container. When you want to serve it, you can reheat it and adjust the consistency by adding some water and finally apply all the toppings.

- 4 medium Potatoes (about 500 grams, boiled, peeled, cut into large pieces)
- 1 tablespoon Oil
- ½ teaspoon Salt (to taste)
- 2 tablespoon Water
- 1 teaspoon Lemon juice
- 1 tablespoon Dabeli masala powder
For garnishing
- 2 tablespoon Masala peanuts (spicy)
- ¼ cup Onion (chopped)
- 2 tablespoon Pomegranate seeds (or chopped grapes)
- ¼ cup Nylon sev (bhel sev or thin gram noodles)
- 3-4 Cilantro sprigs (chopped)
- 2 tablespoon Coconut (shredded)
For assembling dabeli
- 10 Dinner rolls (or burger buns)
- ¼ cup Sweet tamarind chutney (more if needed)
- ¼ cup Garlic chutney (more if needed, or green chutney)
- 2 tablespoon Nylon sev (for dipping)
Instructions
To make dabeli stuffing
- Heat a pan on medium heat.
- Once it is hot, add some oil.1 tablespoon Oil

- Mix well and mash it with a potato masher.
- Add water and optionally some lemon juice and continue mixing and mashing until there are no lumps.2 tablespoon Water, 1 teaspoon Lemon juice
- Turn off the heat and transfer the potato mixture into a tray.
- Spread it evenly to make about 1 centimeter thick layer.
Garnish the potato mixture
- Sprinkle the onions, masala peanuts, nylon sev, pomegranate seeds and chopped cilantro evenly on top of the potato mixture.2 tablespoon Masala peanuts, ¼ cup Onion, 2 tablespoon Pomegranate seeds, ¼ cup Nylon sev, 3-4 Cilantro sprigs
Assemble dabeli
- Slice the dinner rolls on three sides leaving one side attached.
- On the inside, apply garlic chutney on one side and sweet tamarind chutney on the other.
- Take about 2-3 tablespoon dabeli stuffing from the tray and place it inside the dinner roll and press it gently.
- Dip the roll into the nylon sev on all three sides to allow some sev to stick to the filling. This is optional.
- Continue with all the dinner rolls in similar way.
Notes
- Put 1 cup water in the instant pot container.
- Place a trivet in the container and put rinsed potatoes on the trivet.
- Lock the lid with the release valve in the sealing position.
- Start the Instant Pot on high pressure/manual mode for 12 minutes.
- Allow the pressure to release naturally for 10 minutes and then release any additional pressure manually by turning the release valve in venting position.
- Once the silver pin drops, open the lid and remove the potatoes.
- Let them cool down then peel and cut them into large pieces.
