Air fryer pumpkin bread is delicious, easy to make, and the perfect recipe to make during fall, Halloween, or Thanksgiving. It is a quick bread made without yeast and it will fill up your kitchen with pumpkin spice aroma. You can enjoy it for breakfast, snacks, or dessert.
Pumpkin bread is also referred to as pumpkin cake because it is made without yeast and also at times frosted with cream cheese icing.

Making this delicious sweet pumpkin bread at home requires very few ingredients apart from pumpkin puree and pumpkin pie spice. You can use homemade pumpkin puree or store-bought one. Just ensure that you buy canned pumpkin or pumpkin puree and not pumpkin pie filling.
Other ingredients are all-purpose flour, vanilla extract, oil, milk, sugar, salt, baking powder, baking soda, and vinegar.
To make it vegan, you can use plant-based milk. Baking soda, baking powder, and vinegar help in rising the bread as this is a no egg pumpkin bread recipe for the air fryer.
How to make
Making pumpkin bread in the air fryer is very easy. The first step is to make the mixture for which I put all the wet and dry ingredients except the walnuts in the stand mixer bowl.
Mix all the ingredients well with the flat beater attachment or the wire attachment. Once the batter is well mixed, I add the walnuts and give it a quick mix and then pour it into 2 mini loaf pans.
Place the muffin molds in the air fryer basket carefully. Select the air fry setting and air fry the pumpkin bread for about 30-35 minutes at the temperature of 320°F.
Once the timer is up, insert a toothpick or a butter knife to test for doneness. If it comes out clean then the bread is well baked, else you can start air fry it for a few minutes. The pumpkin bread will be ready and your kitchen will have a nice aroma!
Let the muffin pan cool down for about 15-20 minutes and then invert the pan to remove the pumpkin bread. If you invert the pan while the pan is hot then the bread may break.
Place the pumpkin bread on the wire rack to let it cool down completely. Slice it with a serrated bread knife or an electric knife.

You can serve a warm slice with some ginger ice cream, pumpkin ice cream, cinnamon ice cream, pumpkin cheesecake ice cream, or plain vanilla ice cream.
Equipment
I have made this vegan pumpkin bread in the 4 qt. Instant Vortex Plus air fryer. For mixing the batter, I have used 5 qt. bowl lift KitchenAid stand mixer, however a hand blender with a whisk attachment or a hand mixer will work well too.
The bread is cooked in the air fryer in 2 mini loaf pans and then cooled down on a cooling wire rack. For slicing the bread, an electric knife or a serrated bread knife works best.
Storage
Air fryer pumpkin bread can be stored at room temperature for 3-4 days in an airtight container. You can also store it for up to a week in the refrigerator. When you want to eat it, heat it in the microwave for a few seconds.
I also like to freeze it in air-tight containers for up to 3 months. While freezing, I place parchment paper between the slices so it is easy to separate them after freezing. It can be defrosted in the microwave, or on the counter.
Top tip
- It is best to weigh the flour using a digital food scale to ensure consistent results.
- To check for doneness, insert a butter knife at the center of the bread. If it comes out clean, it is done. Otherwise, you can air-fry it for a few more minutes.

Instructions
- Add all the wet and dry ingredients except the walnuts to the stand mixer bowl.1 cup Pumpkin puree, ½ cup Milk, ⅓ cup Oil, ½ teaspoon Vanilla extract, 1 teaspoon Vinegar, 2 cup All purpose flour, 1 cup Organic cane sugar, 1 teaspoon Baking Soda, 1 teaspoon Baking powder, 1 pinch Salt, 1 tablespoon Pumpkin pie spice
- Mix everything well with the wire attachment or the flat beater attachment on medium speed.
- Scrape any flour on the side of the bowl to ensure a good mix.
- Add the chopped walnuts and mix well.½ cup Walnuts
- Transfer the batter to 2 mini loaf pans.
- Place the loaf pans in the air fryer basket.
- Air fry the pumpkin bread for 30-35 minutes at 320°F.
- Insert a butter knife or a toothpick to check if the bread is done. If it does not come out clean then air fry for a few more minutes.
- Remove the pumpkin bread from the air fryer basket and let it cool down for 15-20 minutes.
- Invert and shake the loaf pans to remove the pumpkin bread.
- Let the pumpkin bread cool down completely before slicing or icing it.
