    It is scrumptious, delicious, moist in texture, and slightly sweet in taste. It also has a warm flavor from cinnamon powder and allspice powder. It can be served as for breakfast or a quick snack. It is perfect for kids' after-school snack.

    This bread machine zucchini bread recipe is made with no yeast, no eggs, and can be adapted to make chocolate zucchini bread. You can also make it vegan by using plant based milk.

    Making a no-yeast sweet zucchini bread at home requires very few ingredients apart from fresh grated zucchini.

    Other ingredients are all-purpose flour, vanilla extract, oil, milk, sugar, salt, baking powder, baking soda, and vinegar. A little bit of allspice powder and cinnamon powder add a unique warm flavor to the bread.

    To make it vegan, you can use plant-based milk. Ensure that you sift the flour as it makes light bread. Baking soda, baking powder, and vinegar help in rising the bread as we are not using any eggs in making this bread machine zucchini bread recipe.

    Instructions

    Making zucchini bread in the bread machine is very easy. All you need to do is put all the wet and dry ingredients in the bread machine pan in the order recommended by the bread machine manufacturer.

    It is best to weigh and sift the all-purpose flour to make the zucchini bread to avoid any lumps and also ensure a light and airy cake.

    Grate the zucchini using a box grater or a food processor using the shredding disc. You can keep the zucchini peel on when making zucchini bread.

    Step 1: Gather all the ingredients for making zucchini bread.

    Step 2: Grate zucchini with a grater.

    Once you put all the ingredients into the pan, except the walnuts, place it inside the bread machine. Select the "quick bread" setting. It is the perfect setting to make bread machine sweet bread recipes like banana bread, pumpkin bread, and cakes like carrot cake.

    The quick bread setting will mix all the ingredients well and then bake the zucchini bread. While the ingredients are mixed with the paddle to make a smooth batter, push down any flour on the sides of the bread pan using a rubber spatula to ensure a good mix, and then close the lid.

    When the machine beeps for add-ins, add some chopped walnuts or pecans. If your machine does not beep, you can add the walnuts just a minute before the baking starts.

    Once the cycle is complete, the zucchini bread will be ready. Insert a toothpick or a butter knife at the center of the bread to test for doneness. If it comes out clean then the bread is well baked, else you can start the bake cycle for a few minutes to bake the bread.

    Step 3: Put wet and dry ingredients in bread machine and select "Quick bread" cycle.

    Step 4: Once ready, let the bread cool down for 25-20 minutes.

    Let the bread maker pan cool down for about 20-30 minutes and then invert the pan to remove the zucchini bread. If you invert the pan while the pan is hot then the bread will break.

    Place the bread on a wire rack to cool down completely and then you can slice it with an electric knife or a bread knife. Zucchini bread is moist and soft in texture.

    Variations

    • Nuts - add some pecans instead of walnuts or skip them altogether.
    • Vegan - use plant based milk to make vegan zucchini bread.
    • Chocolate chips - add some chocolate chips to make chocolate chip zucchini bread.

    I have made this vegan zucchini bread in the 2 lb. Hamilton Beach artisan bread machine. You can make it in any bread machine which has a "quick bread" cycle.

    For slicing the bread, an electric knife or a serrated bread knife works best.

    Storage

    Zucchini bread can be stored at room temperature for 3-4 days. You can also store it for up to a week in the refrigerator. When you want to eat it, heat it in the microwave for a few seconds so that it comes to room temperature.

    If you want to store zucchini bread for a longer time, slice it with a bread knife and freeze it in air-tight containers or ziplock bags for up to 3 months.

    While freezing, you can place parchment paper between the slices so it is easy to separate them after freezing. You can defrost it in the microwave, or leave it on the counter to thaw.

    Top tip

    • It is best to weigh the flour with a digital food scale for consistent results.
    • When the quick bread cycle is complete, insert a toothpick or butter knife to check if the bread has cooked.

    • 1 cup Organic cane sugar
    • 1 teaspoon Baking Soda

    • 1 pinch Salt
    • 1 teaspoon Cinnamon powder
    • ยฝ teaspoon Allspice powder

    Instructions

    • Add all the wet and dry ingredients in the bread machine container in the order recommended by the bread machine manufacturer.
      2 cup Zucchini, ยฝ cup Milk, โ…“ cup Oil, ยฝ teaspoon Vanilla extract, 1 teaspoon Vinegar, 2 cup All purpose flour, 1 cup Organic cane sugar, 1 teaspoon Baking Soda, 1 teaspoon Baking powder, 1 pinch Salt, 1 teaspoon Cinnamon powder, ยฝ teaspoon Allspice powder
    • Select and start the "Quick Bread" cycle
    • Keep the lid open and monitor for a few minutes, scrape any flour on the side of the pan to ensure a good mix.
    • A minute before the baking cycle starts, add the chopped walnuts and close the lid. (or when the machine beeps for add-ins)

    • Once the baking is complete and "Quick Bread" cycle is over, remove the bread machine pan from the bread machine and allow it to cool down for 15-20 minutes.
    • Invert and shake the bread machine pan to remove the zucchini bread.
    • Let the zucchini bread cool down completely before slicing or icing it.

    Top tips:
    • It is best to weigh the flour using a digital food scale and sift the flour so that there are no lumps while the bread machine mixes all the ingredients.
    • While the bread machine is mixing all the ingredients, scrape any flour on the sides of the pan to ensure a good mix.

    • Nuts - add some pecans instead of walnuts or skip them altogether.
    • Seeds - add a few pumpkin seeds for a slight crunch.
