Making a no-yeast sweet pumpkin bread at home requires very few ingredients apart from pumpkin puree and pumpkin pie spice. You can use homemade pumpkin puree or store-bought one, just ensure that you buy canned pumpkin or pumpkin puree and not pumpkin pie filling.
Other ingredients are all-purpose flour, vanilla extract, oil, milk, sugar, salt, baking powder, baking soda, and vinegar.
To make it vegan, you can use plant-based milk. Ensure that you sift the flour as it makes light bread. Baking soda, baking powder, and vinegar help in rising the bread as we are not using any eggs in this recipe.

Instructions
Making pumpkin bread in the bread machine is very easy. All you need to do is put all the wet and dry ingredients in the bread machine pan in the order recommended by the bread machine manufacturer.
It is best to weigh and sift the all-purpose flour to make the pumpkin bread to avoid any lumps and also ensure a light and airy cake.
Once you put all the ingredients into the pan, place it inside the bread machine. Select the "quick bread" setting. It is the perfect setting to make bread machine sweet bread recipes like banana bread and cakes like carrot cake.
The quick bread setting will mix all the ingredients well and then bake the bread. While the ingredients are mixed with the kneading blade, push down any flour on the sides of the bread pan using a rubber spatula to ensure a good mix, and then close the lid.

Ingredients to make vegan pumpkin bread.

Place all wet and dry ingredients in the bread machine pan.
When the machine beeps, add some chopped walnuts or pecans. If your machine does not beep, you can add the walnuts just a minute before the baking starts.
Once the cycle is complete, the pumpkin bread will be ready and your kitchen will have a nice aroma! Insert a toothpick or a butter knife to test for doneness. If it comes out clean then the bread is well baked, else you can start the bake cycle for a few minutes to bake the bread.
Let the bread maker pan cool down for about 20-30 minutes and then invert the pan to remove the pumpkin bread. If you invert the pan while the pan is hot then the bread will break.
Place the pumpkin bread on the wire rack to let it cool down completely. Slice it with a serrated bread knife or an electric knife.

Variations
- Nuts - add some pecans instead of walnuts or skip them altogether.
- Seeds - add a few pumpkin seeds for a slight crunch.

I have made this vegan pumpkin bread in the 2 lb. Hamilton Beach artisan bread machine. For slicing the bread, an electric knife or a serrated bread knife works best.
Storage
Pumpkin bread can be stored at room temperature for 3-4 days. You can also store it for up to a week in the refrigerator. When you want to eat it, heat it in the microwave for a few seconds.
If you want to store it longer, slice it and freeze it in air-tight containers for up to 3 months. While freezing, you can place parchment paper between the slices so it is easy to separate them after freezing. You can defrost it in the microwave, or leave it on the counter to defrost.

Ingredients
Wet ingredients
- 1 cup Pumpkin puree
- ½ cup Milk (Almond or plant based milk to make it vegan)
- ⅓ cup Oil
- ½ teaspoon Vanilla extract
- 1 teaspoon Vinegar
Dry ingredients
- 2 cup All purpose flour (240 grams, sifted)
- 1 cup Organic cane sugar
- 1 teaspoon Baking Soda
- 1 teaspoon Baking powder
- 1 pinch Salt
- 1 tablespoon Pumpkin pie spice
Add-ins
- ½ cup Walnuts (chopped, optional)
Instructions
- Add all the wet and dry ingredients in the bread machine container in the order recommended by the bread machine manufacturer.1 cup Pumpkin puree, ½ cup Milk, ⅓ cup Oil, ½ teaspoon Vanilla extract, 1 teaspoon Vinegar, 2 cup All purpose flour, 1 cup Organic cane sugar, 1 teaspoon Baking Soda, 1 teaspoon Baking powder, 1 pinch Salt, 1 tablespoon Pumpkin pie spice
- Select and start the "Quick Bread" cycle
- Keep the lid open and monitor for a few minutes, scrape any flour on the side of the pan to ensure a good mix.
- A minute before the baking cycle starts, add the chopped walnuts and close the lid. (or when the machine beeps for add-ins)½ cup Walnuts
- Once the baking is complete and "Quick Bread" cycle is over, remove the bread machine pan from the bread machine and allow it to cool down for 15-20 minutes.
- Invert and shake the bread machine pan to remove the pumpkin bread.
- Let the pumpkin bread cool down completely before slicing or icing it.
