    Banana muffins are a perfect snack or dessert that you can make when you have ripe bananas that no one wants to eat. And it is really quick and easy to make them in the air fryer.

    This is an easy recipe to make air fryer banana muffins with chocolates and with no eggs. You can skip the chocolate chips and use nuts like walnuts and pecans.

    Ingredients

    To make this easy air fryer banana muffin recipe with no eggs, you will need ripe bananas, ones whose skin has turned dark or has a lot of dark spots.

    All-purpose flour, milk, sugar, oil, vanilla extract, and vinegar are used along with some baking soda and baking powder as a leavening agent.

    I have used semi-sweet chocolate chips to make these chocolate banana muffins in the air fryer.

    How to make

    In a large mixing bowl or stand mixer bowl, mash the ripe bananas with the help of a fork or a potato masher. Then add all the wet and dry ingredients in the bowl except the walnuts.

    With the help of a wire attachment mix all the ingredients at medium speed. Add the chocolate chips and mix them gently with a spatula.

    Transfer the banana muffin batter into muffin molds to โ…”rd capacity each. I have used the silicone muffin holders with tabs that make them easy to handle.

    Place the muffin molds in the air fryer basket carefully. Select the air fry setting and air fry the banana muffins for about 12 minutes at the temperature of 320ยฐF.

    You can insert a toothpick at the center of the muffin to check for doneness. If it comes out clean, banana muffins are done, or you can air fry for a few more minutes.

    Step 6: Air fry banana muffins at 320ยฐF for 12 minutes.

    Substitutions

    • Plant-based milk - to make it vegan use almond milk or any other plant-based milk.
    • Brown sugar - use brown sugar instead of cane sugar.
    • Nuts - use pecans instead of walnuts

    Variations

    • Nuts - add some chopped walnuts or pecans instead of chocolate chips to make banana nut muffins.
    • Vegan - use plant-based milk to make it vegan.

    Equipment

    To make the banana muffin batter, a stand mixer with a wire attachment helps in mixing well. You can also use a hand blender with a whisk attachment or a hand mixer.

    I have made the muffins in silicone muffin molds just like these air fryer vanilla cupcakes. Depending on the air fryer, and the size of the basket, you may have to air fry the muffins in multiple batches.

    Storage

    Banana muffins can be stored at room temperature for 3-4 days in an airtight container.

    Top tip

    To check if the banana muffins are done, insert a toothpick at the center of the muffin and see if it comes out clean, that means it is well cooked. Else you can air fry it for a few more minutes.

    Can I use paper muffin cups in my air fryer?

    If you are using a muffin pan then you can use paper muffin liners or silicone muffin cases in the air fryer.

    Ingredients

    Wet ingredients

    • 3 Bananas (medium size, ripe)
    • ยฝ cup Milk (Almond or plant based milk to make it vegan)
    • โ…“ cup Oil
    • ยฝ teaspoon Vanilla extract
    • 1 teaspoon Vinegar

    Dry ingredients

    • 2 cup All purpose flour (240 grams)
    • ยพ cup Organic cane sugar
    • ยฝ teaspoon Baking Soda
    • ยฝ teaspoon Baking powder
    • Pinch of Salt

    • ยฝ cup Chocolate chips (semi sweet or as per choice)

    • Peel the bananas and put them in the stand mixer bowl.

    • Add all the wet and dry ingredients, except chocolate chips, to the stand mixer bowl.

    • Mix everything well with the wire attachment on medium speed.
    • Scrape any flour on the side of the bowl to ensure a good mix.
    • Add the chocolate chips and mix well with a spatula.

    • Pour the batter into the silicone molds upto โ…”rd capacity.
    • Put the muffin molds into the air fryer basket.
    • Air fry for about 12 minutes at 320ยฐF.
    • Insert a toothpick at the center of the muffin to check for doneness. If it does not come out clean then air fry for a few more minutes.
    • Remove the muffin molds from the air fryer and allow them to cool down for 15-20 minutes.
    • Continue air frying the remaining banana muffins in similar way.

    Notes

    Top tips:
    • It is best to weigh the flour using a digital food scale.
    • While the stand mixer is mixing all the ingredients, scrape any flour on the sides of the bowl to ensure a good mix.
    Variations:
    • Nuts - add some pecans or walnuts instead chocolate chips or skip them altogether.
