Banana bread is a popular snack and breakfast. It is a great way to use up those ripe bananas no one wants to eat in the family. Banana bread is made without yeast and it is also called banana cake.
Baking banana bread is easy in the convection oven but for days you don't want to turn the oven on or have something else baking, air fryer is very handy. They are as easy to make as air fryer banana muffins.
Banana bread comes out soft, moist, and delicious in the air fryer. This is an easy recipe for air fryer banana bread with no eggs. You can make it vegan by using plant based milk.

Ingredients
To make this easy air fryer banana bread recipe with no eggs, you will need ripe bananas, ones whose skin has turned dark or has a lot of dark spots. All purpose flour, milk, sugar, oil, vanilla extract, and vinegar are used along with some baking soda and baking powder as a leavening agent.
It is a sweet bread without yeast and so it can also be called a banana cake. To make a vegan banana bread you can use a vegan plant based milk like oat milk.
How to make
In a large mixing bowl or stand mixer bowl, mash the ripe bananas with the help of a fork or a potato masher. Then add all the wet and dry ingredients in the bowl except the walnuts.
With the help of wire attachment mix all the ingredients at medium speed. Add the chopped walnuts and mix it well. Transfer the banana bread batter into 2 mini loaf pans. You can also use a large pan if it fits in your air fryer.
Preheat the air fryer for 2-3 minutes to 320°F. Place the loaf pans in the air fryer basket carefully. Select the air fry setting and air fry the banana bread for about 40 minutes at the temperature of 320°F.
You can insert a butter knife at the center of the bread to check for doneness. If it comes out clean, banana bread is done, else you can air fry for a few more minutes.
Let the bread cool down for about 15-20 minutes in the loaf pan. You can leave the loaf pans in air fryer for a few minutes and then remove them as they will be hot.
Run a butter knife on the sides and invert the loaf pan and gently remove the banana bread. Place it on the cooling rack to let it cool down completely.
Once it cools down, you can slice it with a serrated knife or an electric knife. You can apply some frosting if you prefer. Enjoy it with your morning coffee or as a snack.

To make the banana bread batter, a stand mixer with wire attachment helps in mixing well. You can also use a hand blender with the whisk attachment or a hand mixer.
I have made the bread by dividing the batter into 2 mini loaf pans which fit well in the 4 qt. Instant Vortex air fryer. Depending on the air fryer, the size of baking pan may vary and the time will also vary by a few minutes.
Once the bread is removed from the loaf pans, you can let it cool down completely on a wire rack.
Storage
Air fryer banana bread can be stored at room temperature in an airtight container for 3-4 days. Slice it when you want to eat it, else the slices can dry up a little bit. If you apply cream cheese frosting then the banana bread must be refrigerated.
You can also freeze the whole banana bread or slice it and freeze it in freezer bag or containers so that you can remove only as many slices as you need. You can defrost the frozen banana bread in the microwave.

Depending on the size of your air fryer and the baking pan, the cooking time may vary by a few minutes.

- ½ cup Milk (Almond or plant based milk to make it vegan)

- ¾ cup Organic cane sugar

Instructions
- Peel the bananas and put them in the stand mixer bowl.3 Bananas
- Mash them with the help of a fork.

- Mix everything well with the wire attachment on medium speed.
- Scrape any flour on the side of the bowl to ensure a good mix.
- Add the chopped walnuts.½ cup Walnuts
- Pour the batter into 2 mini loaf pans.
- Put the pans into the air fryer basket.
- Air fry for about 40-45 minutes at 320°F.
- Insert a butter knife at the center of the bread to check for doneness. If it does not come out clean then air fry for a few more minutes.
- Remove the loaf pans from the air fryer and allow them to cool down for 15-20 minutes.
- Invert and shake the loaf pans to remove the bread.
- Let the bread cool down completely before slicing it.
Notes
- It is best to weigh the flour using a digital food scale.
- While the stand mixer is mixing all the ingredients, scrape any flour on the sides of the bowl to ensure a good mix.
