    Zucchini bread is a delicious quick bread that is made with zucchini, sugar, flour, and spices. It is a moist and flavorful bread that is perfect for breakfast, snack, or dessert. It can easily be made vegan.

    Air fryer zucchini bread can be made any time of the year, but it is more popular in the summer when zucchini is in season. It is also a great way to use up any leftover zucchini or a bountiful harvest that you may have.

    Ingredients

    Making this no-yeast quick zucchini bread at home requires very few ingredients apart from fresh grated zucchini.

    Other ingredients are all-purpose flour, vanilla extract, oil, milk, sugar, salt, baking powder, baking soda, and vinegar. A little bit of allspice powder and cinnamon powder add a unique warm flavor to the bread.

    To make it vegan, you can use plant-based milk like oat milk or almond milk. Baking soda, baking powder, and vinegar help in rising the bread as we are not using any eggs in making this zucchini bread recipe.

    How to make

    Before making zucchini bread, grate the zucchini using a box grater or a food processor using the shredding disc. You can keep the zucchini peel on when making zucchini bread.

    In a large bowl, or stand mixer bowl, put all the wet and dry ingredients except zucchini and walnuts. Mix well with the flat beater attachment or wire attachment on medium speed to ensure there are no lumps.

    Add the shredded zucchini to the mixture and mix well on low speed. Finally add the walnuts and mix once again.

    Divide the batter equally in 2 mini loaf pans. Place them in the air fryer basket and cook the bread for 45 minutes at the temperature of 320ยฐF. There is no need to preheat the air fryer.

    Once done, insert a butter knife or a toothpick to check if the bread is done. If the butter knife comes out clean then it is done else you can air fry it for a few more minutes.

    Remove it from the air fryer, or you can leave it in the air fryer basket for about 15-20 minutes until it cools down a little. Then invert the loaf pan and shake it to remove the bread.

    Let the zucchini bread cool down completely on a cooling wire rack.

    Step 3: Mix all ingredients and add grated zucchini.

    Step 4: Add chopped walnuts.

    Step 6: Air fry the zucchini bread at 320ยฐF for 45 minutes.

    • Milk - use plant based milk to make it vegan.

    • Nuts - add some pecans instead of walnuts or skip them altogether.

    • Chocolate chips - add some chocolate chips to make air fryer chocolate chip zucchini bread.

    Serving suggestions

    Zucchini bread can be enjoyed for breakfast or as a snack. Serve it with a cup of coffee or tea for a satisfying and nutritious breakfast. It is a great after-school snack for kids.

    You can apply some whipped cream, cream cheese frosting or some apple butter. You can eat it with your favorite jam or jelly too.

    It can also be served as a dessert. A warm slice of zucchini bread with some ginger ice cream, pumpkin ice cream, cinnamon ice cream, or plain vanilla ice cream makes it a pleasant treat.

    Equipment

    I have made this air fryer zucchini bread in the 4 qt. Instant Vortex Plus air fryer. You can use any air fryer. Depending on the capacity, both the mini loaf pans may or may not fit in the air fryer and you may need to cook it in multiple batches.

    To make the batter, you can use the stand mixer with flat beater or wire attachment. You can also use a hand mixer or hand blender with the whisk attachment.

    For slicing the bread, an electric knife or a serrated bread knife works best.

    Storage

    Homemade air fryer zucchini bread can be stored at room temperature for 3-4 days. You can also store it for up to a week in the refrigerator. When you want to eat it, heat it in the microwave for a few seconds so that it comes to room temperature.

    If you want to store it for a longer time, slice it with a bread knife and freeze it in air-tight containers or ziplock bags for up to 3 months.

    While freezing, you can place parchment paper between the slices so it is easy to separate them after freezing. You can defrost it in the microwave, or leave it on the counter to thaw.

    Top tip

    After 45 minutes insert a butter knife to test for doneness. If it comes out clean, it is done, else you can air fry it for a few more minutes.

    Do you leave the skin on zucchini when making bread?

    Yes, there is no need to peel the skin of zucchini, you can grate the zucchini as is for making zucchini bread.

    Dry ingredients

    • 2 cup All purpose flour (240 grams, sifted)
    • 1 cup Organic cane sugar
    • 1 teaspoon Baking Soda
    • 1 teaspoon Baking powder
    • 1 pinch Salt
    • 1 teaspoon Cinnamon powder
    • ยฝ teaspoon Allspice powder

    Instructions

    • Add all the wet and dry ingredients except grated zucchini and walnuts in a large mixing bowl or stand mixer bowl.

    • Mix everything at a medium speed well using the flat beater attachment or wire attachment of the stand mixer.
    • Add the grated zucchini and mix well on low speed.
      2 cup Zucchini
    • Add the chopped walnuts and mix well.
      ยฝ cup Walnuts
    • Transfer the batter to 2 mini loaf pans.
    • Air fry the zucchini bread for 45 minutes at 320ยฐF.
    • Insert a butter knife to check for doneness, if it comes out clean it is done, else air fry the bread for a few more minutes.
    • Let the loaf pans cool down for about 15 minutes.
    • Invert and shake the loaf pan to remove the zucchini bread.
    • Let the zucchini bread cool down completely before slicing or icing it.

    Notes

    Top tips:
    • It is best to weigh the flour using a digital food scale.
    • While the stand mixer is mixing all the ingredients, scrape any flour on the sides of the bowl to ensure a good mix.
    Variations:
    • Nuts - add some pecans instead of walnuts or skip them altogether.
    • Seeds - add a few pumpkin seeds for a slight crunch.
