Ingredients
To make air fryer bagels from scratch, you will need bread flour, instant yeast, water, oil, salt, and a little sugar. Instead of bread flour, all-purpose flour can be used. You can also use active dry yeast instead of instant yeast.
To boil the bagels you will also need a large pot of water. For topping the bagels you will need milk and a seasoning of your choice like Everything bagels seasoning, poppy seeds, or sesame seeds.
Instructions
Once you gather all the ingredients, the first step is to make the dough. Place all the wet and dry ingredients in the stand mixer bowl and knead it for about 12 minutes into a soft dough. Use the dough hook and setting 2 for kneading the dough.
Ingredients to make bagels.
Put all the ingredients for making dough in the stand mixer bowl.
The dough will attach to the hook and it is a sign that the dough is ready. Make a smooth ball of dough and then place it in the mixing bowl and cover it. Let it rise for about an hour until it doubles in volume. You can also proof the dough in the Instant Pot.
Make bagel dough in stand mixer.
Let the dough rise until double in volume.
After the dough is through its first rise, transfer it onto a lightly floured surface and knead it into a ball. Divide it into 10 equal pieces and roll each of the pieces into a smooth ball by tucking all the edges to one side.
While you are making the dough balls, keep the rest of the dough balls covered with a kitchen towel or cling wrap. Now one by one make a hole at the center of the each dough ball with your index fingers pushing the dough outwards, make an inch wide hole. After that boil them in boiling water for a minute on each side.
Divide and shape the dough into bagels.
Boil the bagels in water.
Using a slotted spoon, remove the boiled dough balls. Apply some milk on the bagels using a basting brush. Sprinkle your favorite seasonings on them. Preheat the air fryer to 390°F for 2-3 minutes or until it prompts to add food.
Place the seasoned bagels into the air fryer in a single layer. Air fry for about 6 minutes at 390°F. Then flip the bagels upside down and air fry for another 2 minutes to ensure they are well cooked from all the sides. Transfer the bagels onto a cooling rack with the help of kitchen tongs.
Place bagels in air fryer basket.
Air fryer bagels are ready.
Substitutions
- Yeast - instead of instant yeast, use active dry yeast. Activate it by mixing it in warm water and sugar and letting it rest for 10 minutes. Then use it to knead the flour.
- Flour - use all-purpose flour instead of bread flour.
Variations
- Seasoning - apply seasoning of your choice like everything bagel seasoning, poppy seeds, or sesame seeds.
- Oven - you can bake the bagels in the oven at 400°F for about 20 minutes.
- Vegan - use plant based milk to brush the bagels to make vegan air fryer bagels.
- Frozen dough - to use frozen dough, thaw the dough to room temperature and then make dough balls and follow the rest of the process.
Serving suggestions
Air fryer bagels can be served for morning breakfast with some hot coffee or for snack. It can be served toasted with some jam, cream cheese, cheese spread, peanut butter, or butter. You can make a avocado toast or just enjoy it with a slice of cheese.
Equipment
I have made these air fryer bagels in the 4 qt. Instant Vortex Plus air fryer. They can be made in any air fryer and depending on the capacity of the air fryer, you may have to make the bagels in multiple batches.
Also, to make the dough for bagels, I have used the 5 qt. Bowl lift KitchenAid stand mixer. If you want to make the dough in the bread machine then check out how to make bagels using bread machine.
A large pot or Dutch oven is useful to boil the bagels. A basting brush is useful in applying milk on the bagels before putting the seasoning, sesame seeds, or poppy seeds.
Storage
Homemade bagels can be stored at room temperature for 3-4 days. If you want to store them for longer then you can store them in the freezer for about 3 months. To use them, simply defrost them in the microwave and toast them in a toaster or in the air fryer.
If you want to plan ahead, you can make the dough in bulk and divide them into smaller dough balls and freeze them. When you want to make only a few bagels, defrost the dough and then shapes it and continue with the rest of the process of boiling and air frying. Check out this post on how to freeze dough.
Top tip
It is best to weigh the flour for consistent results. Measuring flour with a cup can result in adding more flour than needed.
You can also use frozen dough, thaw it at room temperature, and the proceed with shaping, boiling, and air frying steps.

this recipe is very tasty & so easy to make. My air fryer is a vortex mini so I bake 425° for 20 minutes. Bagels were to small cut in 10 - I cut in 6 pieces - much better for bagel sandwiches. thank you, Susan Cornish
