It is really quick and easy to make this hot broccoli cheese dip to be served in a bread bowl with some chips, crackers, veggies, or bread.
This broccoli cream cheese dip can be made ahead of time for an event and stored in the fridge. I love to make this dip for the Super Bowl party. It is really easy to make this cheesy dip in the Instant Pot in just under 30 minutes.
Ingredients
Broccoli cheese dip is made with very few ingredients. This recipe is made with broccoli florets, cream cheese, mozzarella cheese, and cheddar cheese. Chopped onions and garlic are added for flavor.
I like to use fresh broccoli but frozen broccoli florets will work as well. Before using them rinse them under water to ensure there are no ice crystals and then squeeze out any excess water. If there is too much water in the broccoli then it can make the dip a little runny.
I like to use fresh blocks of mozzarella and cheddar cheese and grate them in a food processor or sometimes a hand grater. Using pre-packaged grated cheese may not dissolve well.
If you want to add some spiciness then you can sprinkle some black pepper, red pepper flakes or add a few slices of jalapeno pepper while cooking. To make the dip kid-friendly, I have not added any spiciness.
Instructions
Broccoli cheese dip is a great appetizer for events like Super Bowl, potlucks, or parties. It is very quick and easy to make at home in the Instant Pot.
Before you get started, chop the broccoli florets into smaller pieces. The best way to do it is by using a food processor and using the pulse button a few times until they are of the desired size.
To start making the hot broccoli cheese dip, turn the Instant Pot on saute mode in the normal setting. Once it is hot add some olive oil followed by chopped onion and garlic. Continue to saute until the onions are translucent and this will take about a minute or so.
Add the water and deglaze the bottom of the pot using a spatula and then add salt, chopped broccoli florets, and pieces of cream cheese. Close and lock the lid and cook on high-pressure mode for 1 minute with the pressure release valve in the sealing position.
Perform a quick release by moving the pressure knob to the venting position until the silver pin drops and then mix the cream cheese and broccoli well with a spatula. The broccoli will be tender and mash up easily.
Keep the saute mode on, this helps to get rid of any excess liquid. Add the mozzarella cheese, and cheddar cheese, and stir the mixture well with a spoon until there are no lumps.
Hot broccoli cream cheese dip is now ready to be served for your favorite event. You can also keep the "keep warm" setting on until you are ready to serve it in a large bowl.
Variations
If you want to add some spiciness then you can sprinkle some black pepper, red pepper flakes or add a few slices of jalapeno pepper while cooking. To make the dip kid-friendly, I have not added any spiciness.
To add some garlic flavor, sprinkle some garlic powder after opening the Instant Pot or a few cloves of garlic while pressure cooking.
Serving suggestions
The ideas are a plethora! A hot broccoli dip pairs well with bread like French bread, sourdough bread, focaccia bread, breadsticks, tortilla chips, pita bread, a variety of crackers, tacos, or quesadillas.
A hot broccoli cheese dip can also be served on the side with veggies like carrots and celery.
Storing suggestions
Broccoli cheese dip can be stored in the fridge for 3-4 days. Allow it to cool down completely and then store it in an air-tight container. You can always make this dip ahead of time for an event.
When you are ready to serve, you can reheat the cheese dip in the microwave, stovetop, or in the Instant Pot on the saute mode. While reheating, if you want, you can adjust the consistency by adding a little milk or heavy cream.
Broccoli cheese dip freezes well for up to a month. Once the dip has cooled down, you can portion it and then store them in freezer-safe containers or ziplock bags.
When you plan to eat, you can simply keep the container in the fridge overnight to thaw and then reheat it in the microwave. If the texture looks a little grainy, you can mix it well and if needed add some milk or heavy cream to adjust the consistency.

Hi Dona,
Yes, you can easily make it on the stove top. Follow the same instructions of sauteing the ingredients on medium heat, adding some water, broccoli florets, and cream cheese. Cover it and cook it for about 10 minutes. The florets should be soft and also the cheese should become very soft so that you can mix it. If needed, cook for a couple more minutes. Mix everything well and finally add cheese in batches and combine it so that it mixes well.
