    Pav bhaji fondue is a fusion Indian appetizer made with pav bhaji. It is a perfect dip for parties, potlucks, and get-togethers.

    What you will need

    The main ingredient for making pav bhaji fondue is pav bhaji. It can be made fresh or leftovers can be used. It is blended to a smooth puree in a blender like Vitamix.

    Vegetable broth is used as the base. Grated cheese like cheddar and pepper jack are added to make it cheesy.

    To enhance the flavor, pav bhaji masala is added along with some heavy cream which gives it a smooth texture.

    Blend the bhaji to a smooth puree. Assemble the electric fondue pot and heat it at a 5.5 setting. Add the broth and let it come to a boil. Add the puree and mix well.

    Step 2: Boil the broth in a fondue pot.

    Now slowly add the grated cheese, a little at a time, and mix well until it is dissolved. Add until you get a nice cheesy consistency. Add the pav bhaji masala powder and heavy cream.

    Mix well and adjust salt and spiciness as per taste by adding more pav bhaji masala.

    Step 3: Mix in the blended bhaji and then add cheese.

    Step 4: Add the pav bhaji masala and heavy cream.

    How to serve

    Serve the pav bhaji fondue hot with toasted pieces of dinner rolls. If using a Cuisinart electric fondue, maintain the temperature at a 3.5 to 4 setting.

    What type of fondue pot to use

    I have used the 3 qt. Cuisinart electric fondue pot to make pav bhaji fondue. I have made the fondue directly in the pot. It can be made on the stovetop and then transferred to a non-electric fondue pot.

    How to store leftovers

    It is best to serve the pav bhaji fondue hot and you won't even realize when it will be gone.

    If you have any leftovers, they can be stored in the fridge in an airtight container and can be reheated later.

    Helpful tips

    Add a little cheese at a time and mix it well until it melts.

    Equipment

    • Fondue Pot (3 qt.)
    • Vitamix (or another blender)

    Ingredients

    • 1 ยฝ cup Vegetable broth
    • 2 cup Pav bhaji (check notes for recipe)
    • ยฝ cup Cheddar cheese (4 oz., grated)
    • ยฝ cup Pepper jack cheese (4 oz., grated)
    • 1 teaspoon Pav bhaji masala
    • 2 tablespoon Heavy Cream

    Instructions

    • Blend the bhaji in a blender to a smooth puree.
      2 cup Pav bhaji
    • Turn on the electric fondue pot on setting 5.5 and add vegetable broth.
      1 ยฝ cup Vegetable broth
    • Once the broth starts boiling, add the blended bhaji.
    • Mix it well with a silicone spatula.
    • Slowly add grated cheese, about ยผ cup at a time.
      ยฝ cup Cheddar cheese, ยฝ cup Pepper jack cheese
    • Mix it well until all the cheese dissolves.
    • Check the consistency and add more cheese if needed.
    • Add the pav bhaji masala to taste and mix well.
      1 teaspoon Pav bhaji masala
    • Add the heavy cream and mix well.
      2 tablespoon Heavy Cream
    • Pav bhaji fondue is ready, serve it with toasted dinner roll bites.

    Notes

    • For vegetable broth, use all scraps while making bhaji and boil it in a pot of water for about 30 minutes. strain the liquid which is vegetable broth.
    • If you do not have an electric fondue pot, follow the steps to make fondue in a saucepan on the stovetop and then transfer to a fondue pot for serving.
