The word bhel means mixture and puri is a wheat crispy or papdi with which you eat the bhel. Bhel is of two varieties, one is the dry bhel also called sukha bhel which does not have the liquid chutneys but dry ones. The other one is the geeli bhel with chutneys which makes it moist.
This is an easy Mumbai street style bhel puri recipe that can be made in just 5 minutes once you have all the ingredients ready.

Ingredients
The main ingredient to make bhel recipe is puffed rice, also called murmura or at times kurmura. The puffed rice must be crunchy else you can roast it on the skillet for 2-3 minutes.
Other ingredients include boiled, peeled and chopped potatoes, chopped tomatoes and onions. For spiciness some green chilies or serrano pepper is added along with cilantro green chutney. Tamarind chutney or bhel chutney adds sweet and tangy taste.
Some chaat masala and optionally lime juice enhance the overall taste of bhel puri. Roasted peanuts, thin nylon sev or bhel sev, and crushed papdi are added for crunchiness. If raw mangoes are available, you can add a tablespoon of it. Optionally sprouted moong beans can be added too.

Instructions
Making bhel puri at home is very easy once you have all the ingredients ready. Chop the boiled potatoes and tomatoes into small cubes. Finely chop the onions. You can roast the peanuts in an air fryer.
Before mixing all the ingredients, check the puffed rice. If it crushes easily and feels crunchy, they are perfect to use. If they are a little soft and chewy, toast them for 2-3 minutes in a skillet on medium heat.

Mix all dry ingredients.
In a large bowl, add the crispy puffed rice, boiled potatoes, onions, tomatoes, peanuts, and crushed bhel papdi for a nice crunch. Give it a quick mix. Add the spicy green chutney, imli ki chutney, and optionally chopped serrano peppers.
Adjust the chutney based on your taste. You want to add enough so that the bhel is not dry. Finally add the bhel sev, chaat masala powder, chopped cilantro, and some salt. Optionally add some lemon juice and mix everything well.

Mix and garnish.
Substitutions
- Sev - if you do not have thin bhel sev, you can use thick bhujiya sev.
- Pomegranate - add a few tablespoons of pomegranate seeds for garnishing.
- Mint chutney - instead of green chutney you can use mint chutney.
Variations
- Spicy - add more serrano peppers or green chilies and green chutney to make the bhel spicy.
- Gluten-free - skip the papdis to make it gluten-free.
- Kid-friendly - skip the green chilies and green chutney to make it kid friendly.
- Jain diet - skip the onions and potatoes and you can add some chopped cucumbers. Also, use green chutney made without ginger or garlic.
Serving suggestions
Once the bhel puri is ready, it is time to serve and enjoy it. It is best served as an appetizer or as a snack with masala chai. You can serve some green chutney and sweet tamarind chutney on the side. Papdi or puri is served with bhel for eating instead of a spoon.
At times, if you are feeling lazy, bhel puri can be a meal in itself and perfect for busy weeknights. Pair it with a glass of mango lassi and it will make a satisfying meal.

Equipment
Bhel is an easy recipe that does not require any special equipment other than a sharp knife for chopping. You can boil the potatoes in an Instant Pot or in the microwave.
You can roast peanuts at home in the air fryer or use store-bought ones. A large bowl and a serving spoon are needed for mixing all the ingredients.
Storage
It is best to consume the bhel puri chaat once it is made. If you have any leftovers you can store them in the refrigerator for 1-2 days. You can eat it cold or leave it at room temperature for about an hour before eating.
Top tip
It is best to roast the puffed rice in a skillet for a few minutes. This will help it to regain its crispiness.
