
Sev puri chaat is a tantalizing savory snack from the western part of India and very popular in Mumbai's street food culture. It makes a perfect Indian appetizer for potluck, parties and get-togethers with your friends.
Sev puri is a famous Mumbai street food and an evergreen snack that doesn't really need a reason to have it. The combination of onion, fresh cilantro-mint chutney, tamarind chutney, cilantro leaves, etc., packs a mouthwatering punch to our tastebuds.
It takes only a few minutes to make sev puri once you follow a few steps by step instructions. It is a light vegan snack with very little cooking involved.
Sev puri accompanied by a hot cup of masala tea or your favorite beverage on a rainy day can be very refreshing and satisfying.
Ingredients for making sev puri chaat
There is not much cooking involved to make sev puri at home, as the ingredients need to be just placed on top of each other over puri (wheat crispies) which form the base of this dish.
There are a lot of varieties of puri - the deep-fried Indian bread is known as puri, then there are the crispy puffed shells for pani puri or dahi puri chaat. These wheat crispies for sev puri recipe are flat and are commonly used to make sev puri chaat and bhel puri.
The other ingredients to make sev puri chaat are boiled mashed potatoes, chopped onions, cilantro chutney, sweet and spicy tamarind and date chutney, chaat masala, sev (thin gram noodles) and cilantro for garnishing.

How to boil potatoes in instant pot
One of the main ingredients in making sev puri chaat is boiled mashed potatoes. Potatoes can be cooked in the microwave or in the instant pot. I like to cook potatoes in the instant pot as sometimes the microwave gives a sensor error while cooking potatoes.
I personally prefer red potatoes and to cook red potatoes in the 3 qt. instant pot, add about half cup water to the instant pot container, and then place the trivet inside the container.
Place the potatoes on the trivet. Close the lid and pressure cook the potatoes for 8 minutes on high-pressure mode with pressure valve in sealing position.
Once done, let the pressure release naturally for 10 minutes and then remove the additional pressure manually carefully.
How to make sev puri at home

Arrange the puri (wheat crispies) in a tray. Place all the ingredients in order - mashed potatoes, chopped onions, cilantro green chutney, sweet and sour tamarind date chutney.
Sprinkle some salt and chaat masala and then top it with sev (thin gram noodles) and garnish with chopped cilantro.
Optionally you can also put a few drops of lime juice.

Tips for serving sev puri chaat
Sev puri is enjoyed as an evening snack with some hot masala tea. Sev puri is a perfect appetizer that can be prepared in advance for your get-together or potlucks.
You can do some prep work of arranging the puri, putting the potatoes and onions, and then when ready to eat, just top it with cilantro green chutney and date tamarind chutney, sev, and garnish with chopped cilantro.

Instructions
Boiling Potatoes in Instant Pot
- Pressure cook red potatoes in instant pot for 8 minutes on high pressure mode with pressure valve in sealing position.
- Once done let the pressure release naturally for 10 minutes and then do a quick release.
Making Sev puri
- Arrange the wheat crispies (puri) in a tray
- On each crispy, put a teaspoonful of mashed potatoes, chopped onions, green and tamarind/date chutney. Sprinkle some salt and chaat masala.
- Put some thin gram noodles (sev) and garnish with chopped cilantro and optionally with a few drops of lime juice
