This is an easy creamy asparagus soup made in the Instant Pot. It is a vegan dump and go recipe made without cream or coconut milk, although they can be added while serving if needed.

Ingredients
I have made this creamy asparagus soup with fresh asparagus, celery, onion, and garlic. For flavor, I have added some salt, pepper, and Italian while serving. A low sodium vegetable broth is preferred to make this soup.

Instructions
Making asparagus soup in the Instant Pot is very easy with very little prep work. Since the soup will be blended into a puree, ingredients like celery, garlic, and onion can be cut into chunks to save time. Also, only trim the ends of asparagus.

Step 1: Gather ingredients for asparagus soup.

Step 2: Put all the ingredients except cream and black pepper into the Instant Pot liner.
Pressure cook all the ingredients for 5 minutes on high pressure mode and then let the pressure release manually for 10 minutes. Release the remaining pressure manually by moving the pressure knob to the venting position.
Blend the asparagus soup using an immersion bender or in a standalone high speed blender like Vitamix. Adjust the taste by adding salt if needed. While serving, and add some black pepper, cream, and herbs.

Step 3: Pressure cook for 5 minutes.

Step 4: Discard bay leaf and blend the ingredients into a smooth soup.
Substitutions
Coconut milk - though cream is optional, instead of heavy cream, you can serve the asparagus soup with some coconut milk to make it vegan.
Frozen asparagus - instead of fresh asparagus, frozen asparagus can be used without any changes to the recipe.

Serving suggestions
I like to serve asparagus soup with some black pepper and a little bit of cream or coconut milk, though it is optional. I like to serve crackers, seed bread, sourdough bread, French bread, breadsticks and garlic knots with it.
A bread bowl is a perfect to serve asparagus soup and make a satisfying meal. For a quick and easy accompaniment, air fryer frozen breadsticks and air fryer frozen garlic knots can be served.

Storage
Asparagus soup can be stored in the refrigerator for 3-4 days in an air tight container. When you plan to eat, you can reheat it in the microwave, stove top, or in the Instant Pot on saute mode.
I also like to freeze asparagus soup in freezer safe containers or ziplock bags for up to 3 months. To thaw it, I put it in the fridge overnight and then reheat in the microwave or stove top.

Instructions
- Add all the ingredients from the "soup list" into the Instant Pot liner.2 lb Asparagus, 3 Cloves Garlic, 1 cup Onion, 2 stalk Celery, 2 cup Vegetable stock, 1 teaspoon Salt, 1 Bay leaf
- Close and lock the lid.
- Pressure cook on high-pressure mode for 5 minutes. (set the 'keep warm' setting on)
- Allow the pressure to release naturally for 10 minutes.
- Release any remaining pressure manually by turning the pressure knob to the venting position.
- Discard the bay leaf.
- Using an immersion hand blender, blend into a smooth soup.
- Adjust salt to taste.
