These air fryer banana muffins with no eggs are delicious and can be made with chocolate chips or nuts like walnuts and pecans. They are a great idea to use up your ripe bananas. They are perfect for breakfast, snack, or dessert.
Equipment
Instant Vortex Air Fryer
(4 qt. or larger)
Stand Mixer
(or hand blender, or hand mixer)
Digital Food Scale
12 Silicone muffin molds
Ingredients
Wet ingredients

Bananas
(medium size, ripe)

Milk
(Almond or plant based milk to make it vegan)

Oil

Vanilla extract

Vinegar
Dry ingredients

All purpose flour

Add-ins

Chocolate chips
(semi sweet or as per choice)
Instructions
Peel the bananas and put them in the stand mixer bowl.
Mash them with the help of a fork.
Add all the wet and dry ingredients, except chocolate chips, to the stand mixer bowl.
Mix everything well with the wire attachment on medium speed.
Scrape any flour on the side of the bowl to ensure a good mix.
Add the chocolate chips and mix well with a spatula.
Pour the batter into the silicone molds upto ⅔rd capacity.
Put the muffin molds into the air fryer basket.
Air fry for about 12 minutes at 320°F.
Insert a butter knife at the center of the muffin to check for doneness. If it does not come out clean then air fry for a few more minutes.
Remove the muffin molds from the air fryer and allow them to cool down for 15-20 minutes.
Continue air frying the remaining banana muffins in similar way.

Top tips:
It is best to
weigh the flour
using a
digital food scale
.
While the
stand mixer
is mixing all the ingredients,
scrape
any flour on the sides of the bowl to ensure a good mix.
Variations:
Nuts - add some
pecans
or
walnuts
instead chocolate chips or skip them altogether.
