Add all the wet and dry ingredients except the walnuts to the stand mixer bowl.
Mix everything well with the wire attachment or the flat beater attachment on medium speed.
Scrape any flour on the side of the bowl to ensure a good mix.
Add the chopped walnuts and mix well.
Transfer the batter to 2 mini loaf pans.
Place the loaf pans in the air fryer basket.
Air fry the pumpkin bread for 30-35 minutes at 320°F.
Insert a butter knife or a toothpick to check if the bread is done. If it does not come out clean then air fry for a few more minutes.
Remove the pumpkin bread from the air fryer basket and let it cool down for 15-20 minutes.
Invert and shake the loaf pans to remove the pumpkin bread.
Let the pumpkin bread cool down completely before slicing or icing it.
