Cassata ice cream is a popular dessert made with layers of different ice creams on a cake base. It is a perfect party dessert and a crowd pleaser. Check out how to make cassata ice cream from scratch with step by step instructions.
Place all the wet and dry ingredients for cake in the stand mixer bowl and mix well on medium speed using the wire attachment.
Push any flour on the sides of the bowl using a silicone spatula while mixing the ingredients.
Preheat the oven to 350°F.
Pour the batter in a loaf pan.
Bake the cake for 45-50 minutes at 350°F.
Insert a toothpick in the center of the cake. If it comes out clean, it is done. Else bake it for a few more minutes until done.
Allow the cake to cool down for 20 minutes and then invert it to remove it from the pan.

Make ice cream mixtures
Vanilla ice cream - 1) In a mixing bowl, add milk, sugar, and a pinch of salt and whisk on low speed using the whisk attachment of a hand blender until all the sugar is dissolved. 2) Add vanilla extract and heavy cream. 3) Mix well with a spatula or a spoon (do not whisk).
Chocolate ice cream - 1) In a blender of your choice, add sugar, milk, a pinch of salt and cacao (or cocoa) powder and blend on medium speed until all sugar dissolves. 2) In a bowl, add the above mixture and gently mix the heavy cream.
Pistachio ice cream - 1) Blend the milk, sugar, pistachio, and salt in a blender until the pistachios are blended fine and smooth. 2) Transfer to a mixing bowl. 3) Add the heavy cream and vanilla extract and mix with a spatula (do not blend).
Tutti frutti ice cream - 1) In a small bowl, mix ¼ cup milk and custard powder until no lumps. 2) Boil the remaining milk and sugar in a saucepan on medium flame. 3) Once milk comes to a boil, add the custard powder and milk mixture. 4) Continue cooking and stirring until it comes to a boil again. 5) Turn off the flame and add the heavy cream and mix well. 6) Allow the mixture to cool and then chill it in the fridge for about 2 hours.
Make cassata ice cream
Once the cake cools down, make about 1 cm thick slices and place at the bottom of the 3 loaf pans.
Churn vanilla ice cream mixture in ice cream maker for about 25 minutes.
Layer it on the top of cake in each of the 3 loaf pans equally.
Place them in the freezer.
Churn chocolate ice cream mixture in ice cream maker for about 25 minutes.
Remove loaf pans from freezer and layer chocolate ice cream on the top of vanilla ice cream in each of the 3 loaf pans equally.
Place them in the freezer.
Churn tutti frutti ice cream mixture in ice cream maker for about 25 minutes. Add tutti frutti after 20 minutes of churning.
Remove loaf pans from freezer and layer tutti frutti ice cream on the top of chocolate ice cream in each of the 3 loaf pans equally.
Place them in the freezer.
Churn pistachio ice cream mixture in ice cream maker for about 25 minutes.
Remove loaf pans from freezer and layer pistachio ice cream on the top of tutti frutti ice cream in each of the 3 loaf pans equally.
Garnish with grated chocolate, nuts, and candied fruits.
Freeze for 8-10 hours before serving

To make it in a quicker way:1) Use box mix for sponge cake or vanilla cake and bake as per instructions2) Use store bought ice cream and layer it.
