Cassata ice cream is a famous layered ice cream dessert originating from Italy. It is also very popularly served in the Indian cuisine. It is made with layers of ice cream on a sponge cake base. Typically, Neapolitan flavors - vanilla, chocolate, and strawberry ice creams are used to make it. I like to make with different flavors for various occasions.
It is perfect to make for special occasions and celebrations like Holidays, new year, Thanksgiving, birthdays, graduation party, and anniversaries.
What do you need to make cassata ice cream?
For ice cream layers, store-bought ice creams can be used. I have made it with homemade ice creams. I have used vanilla ice cream, chocolate ice cream, pistachio ice cream, and tutti frutti ice cream.
To make ice creams from scratch, heavy whipping cream, whole milk, sugar, and flavors like vanilla extract, pistachio nuts, candied fruits, cocoa powder are needed.
For garnishing, chopped walnuts and grated chocolate are sprinkled on the top of the ice cream.
For the base, I have made cake from scratch. It can also be made from a boxed vanilla cake mix.
Steps to make cassata ice cream
The first step is to bake a sponge cake to make the bottom layer of the cassata ice cream. It can be made with store bought box mix or from scratch. I have baked it from scratch.
Once the cake is ready, let it cool down completely. In the mean time, make the bases for all the ice cream flavors you want to make. I have used vanilla ice cream, chocolate ice cream, tutti frutti ice cream, and pistachio ice cream. But any flavors will work.
Place a layer of sponge cake at the bottom of a loaf pan.
Apply a layer of vanilla ice cream on top of the sponge cake.
Once the sponge cake cools down, make slices and place it at the bottom of the loaf pan. This recipe makes 3 loaf pans. Churn the ice cream flavors one at a time. Apply the layer of ice cream and freeze the pan. Continue churning the next flavor and the apply it as a layer. Continue with all the remaining flavors.
Finally garnish the ice cream with nuts, grated chocolate, cherries, or candied fruits. Freeze it for 8-10 hours and then slice it before serving.
After freezing, to make it easy to remove the ice cream from the pan, place the bottom of the pan in a bowl with water. Then using a spatula and butter knife release the ice cream from the sides and place it in a serving dish and slice it.
Layer it with other ice cream flavors and then garnish with grated chocolate and nuts. Freeze it for 8-10 hours.
Slice the cassata ice cream.
Equipment
For making sponge cake as well as the cassata ice cream, I have used a loaf pan of size 5 inch by 9 inches. It is best to use disposable pans as it is easy to cut off the sides of the pan if needed.

How long can you store cassata ice cream?
Homeade cassata ice cream can be stored in the freezer for 6-8 weeks. Ice cream can be stored longer but you will see some ice crystals on the top which can be scooped.

Ingredients
Wet ingredients - For Cake
- 1 cup Milk
- â…“ cup Oil
- 1 ½ teaspoon Vanilla extract
- 1 teaspoon Vinegar
- 1 teaspoon Orange essence (optional)
Dry Ingredients - For Cake
- 1 ½ cup All purpose flour (180 grams, sifted)
- ¾ cup Organic cane sugar
- ¾ teaspoon Baking soda
- ¾ teaspoon Baking powder
- ½ teaspoon Salt
Vanilla ice cream ingredients
- 2 cups Heavy cream
- 1 cup Milk whole
- â…” cup Organic cane sugar
- 1 teaspoon Vanilla extract
- 1 pinch Salt
Chocolate ice cream ingredients
- 2 cup Heavy Cream
- 1 cup Whole Milk
- ½ cup Cacao Powder or cocoa powder
- ¾ cup Organic cane sugar

Tutti frutti ice cream ingredients
- 1 ½ cup Heavy cream
- 1 ½ cup Milk whole

Pistachio ice cream
- 1 cup Milk whole
- â…” cup Organic cane sugar
- 1 pinch Salt
- ½ teaspoon Vanilla extract
- ½ cup Pistachio raw, shelled, unsalted
- 2 cup Heavy cream
For garnishing
- 2 tablespoon Grated chocolate
- 2 tablespoon Chopped nuts
- 2 tablespoon Candied fruits
Instructions
Make vanilla cake in the oven
- Place all the wet and dry ingredients for cake in the stand mixer bowl and mix well on medium speed using the wire attachment.1 cup Milk, ⅓ cup Oil, 1 ½ teaspoon Vanilla extract, 1 teaspoon Vinegar, 1 teaspoon Orange essence, 1 ½ cup All purpose flour, ¾ cup Organic cane sugar, ¾ teaspoon Baking soda, ¾ teaspoon Baking powder, ½ teaspoon Salt
- Push any flour on the sides of the bowl using a silicone spatula while mixing the ingredients.
- Preheat the oven to 350°F.
- Pour the batter in a loaf pan.
- Bake the cake for 45-50 minutes at 350°F.
- Insert a toothpick in the center of the cake. If it comes out clean, it is done. Else bake it for a few more minutes until done.
- Allow the cake to cool down for 20 minutes and then invert it to remove it from the pan.
- Let the cake cool down completely
Make ice cream mixtures
- Vanilla ice cream - 1) In a mixing bowl, add milk, sugar, and a pinch of salt and whisk on low speed using the whisk attachment of a hand blender until all the sugar is dissolved. 2) Add vanilla extract and heavy cream. 3) Mix well with a spatula or a spoon (do not whisk).2 cups Heavy cream, 1 cup Milk, â…” cup Organic cane sugar, 1 teaspoon Vanilla extract, 1 pinch Salt
- Chocolate ice cream - 1) In a blender of your choice, add sugar, milk, a pinch of salt and cacao (or cocoa) powder and blend on medium speed until all sugar dissolves. 2) In a bowl, add the above mixture and gently mix the heavy cream.2 cup Heavy Cream, 1 cup Whole Milk, ½ cup Cacao Powder, ¾ cup Organic cane sugar, 1 pinch Salt
- Pistachio ice cream - 1) Blend the milk, sugar, pistachio, and salt in a blender until the pistachios are blended fine and smooth. 2) Transfer to a mixing bowl. 3) Add the heavy cream and vanilla extract and mix with a spatula (do not blend).1 ½ cup Heavy cream, 1 ½ cup Milk, ⅔ cup Organic cane sugar, 1 tablespoon Custard powder
- Tutti frutti ice cream - 1) In a small bowl, mix ¼ cup milk and custard powder until no lumps. 2) Boil the remaining milk and sugar in a saucepan on medium flame. 3) Once milk comes to a boil, add the custard powder and milk mixture. 4) Continue cooking and stirring until it comes to a boil again. 5) Turn off the flame and add the heavy cream and mix well. 6) Allow the mixture to cool and then chill it in the fridge for about 2 hours.1 cup Milk, ⅔ cup Organic cane sugar, 1 pinch Salt, ½ teaspoon Vanilla extract, ½ cup Pistachio, 2 cup Heavy cream
Make cassata ice cream
- Once the cake cools down, make about 1 cm thick slices and place at the bottom of the 3 loaf pans.
- Churn vanilla ice cream mixture in ice cream maker for about 25 minutes.
- Layer it on the top of cake in each of the 3 loaf pans equally.
- Place them in the freezer.
- Churn chocolate ice cream mixture in ice cream maker for about 25 minutes.
- Remove loaf pans from freezer and layer chocolate ice cream on the top of vanilla ice cream in each of the 3 loaf pans equally.
- Place them in the freezer.
- Churn tutti frutti ice cream mixture in ice cream maker for about 25 minutes. Add tutti frutti after 20 minutes of churning.1 cup Tutti frutti
- Remove loaf pans from freezer and layer tutti frutti ice cream on the top of chocolate ice cream in each of the 3 loaf pans equally.
- Place them in the freezer.
- Churn pistachio ice cream mixture in ice cream maker for about 25 minutes.
- Remove loaf pans from freezer and layer pistachio ice cream on the top of tutti frutti ice cream in each of the 3 loaf pans equally.
- Garnish with grated chocolate, nuts, and candied fruits.
- Freeze for 8-10 hours before serving
