Roast the flour in a heavy bottom skillet on medium heat for about 7-8 minutes or until it gives a pleasant roasted aroma.

Add ghee and mix well with a spatula. Cook for 2-3 minutes. Add water and sugar and continue cooking well, scrape the bottom of the pan so that it does not stick.

Add cardamom powder and raisins and continue cooking it by covering it with a lid. Cook for about 5-7 minutes, stirring intermittently until the halwa looks dark brown and starts leaving the sides. The ghee will also start releasing. Turn off the heat and serve hot.

    Serving suggestions

Atta halwa is best served warm. It is a true delight in cold weather. You can garnish it with some sliced pistachios or chopped cashews while serving.

    Storage

Whole wheat flour halwa can be stored in the fridge in an airtight container for about 3-4 days. It can also be frozen for up to a month.

Refrigerated halwa will tend to harden. To soften it, simply reheat it in the microwave. If needed, you can add a few spoons of milk or water to make it soft.

Frozen halwa can be defrosted in the refrigerator or at room temperature. Reheat in the microwave to serve it warm.
