Star bread is a holiday and Christmas dessert, breakfast, as well as a treat. It is made with basic pantry staples and although it may seem like a daunting job, it is indeed easy to make.

Ingredients
Star bread recipe with cinnamon and brown sugar filling requires only a few basic pantry ingredients. For the dough, I have used milk, butter, sugar, salt, all-purpose flour, and instant yeast.
For the filling, I have used brown sugar and cinnamon powder. Some unsalted butter is applied inside and on top of the star bread once it is ready. Once it is ready, sprinkle some icing sugar.
Instructions
Making star bread is a multi-step process. First, the dough is made then it is rolled into multiple layers with a filling in between the layers. Then it is cut and shaped into a star and finally baked in the oven.
Step 1: Place wet and dry ingredients in the bread machine pan and make the dough using the dough cycle.
Step 2: Divide the dough into 4 equal parts, shape them into balls, and keep them covered.
Step 3: Roll each dough ball into a circle of about 11 inches in diameter.
Step 4: Place a large 10-inch plate and cut out the edges with a knife.
Perform steps 3 and 4 for all the dough balls. Let the rolled layer rest for about 5 minutes before lifting it and placing it on another plate or silicone mat.
Step 5: Apply butter on the rolled dough layer with a basting brush.
Step 6: Sprinkle â…“rd of the cinnamon and brown sugar filling spreading it evenly.
Step 7: Stack the layers. Roll a layer if it shrinks.
Step 8: Place a 2-inch diameter glass or a bowl and make an indentation. Make 16 cuts as shown.
Step 9: With every 2 portions, twist them outwards twice and then join the ends by pinching them.
Step 10: Cover with cling wrap and rest the star bread for 45 minutes. Bake for 20 minutes at 350°F.
Serving suggestions
Sprinkle some icing sugar on the star bread and enjoy it warm.
Variations
Cheese and herb filling - instead of cinnamon filling, grated cheese and herb filling can be used.
Jam filling - instead of cinnamon filling, jam can be applied to the layers.
Vegan - to make it vegan, use vegan butter and plant-based milk.
Equipment
I have made the dough for making star bread in the bread machine. I have used my new Zojirushi Virtuoso Plus. Any other bread machine or a stand mixer can be used to make the dough.
The layers of star bread are rolled using a rolling pin and then cut using a sharp knife. The star bread is baked in the oven.
Storage
Star bread can be stored at room temperature and covered with a cling wrap. When you are ready to eat, simply warm it in the microwave.

Ingredients
For making dough
- ¾ cup Milk (microwave 20 seconds)
- 3 tablespoon Butter (unsalted, melted)
- 2 ½ cup All-purpose flour (300 grams)
- 3 tablespoon Organic cane sugar
- ¾ teaspoon Salt
- ½ tablespoon Instant yeast 5 grams
For the filling
- â…“ cup Brown sugar (or organic cane sugar)
- 1 ½ teaspoon Cinnamon powder
- 2 tablespoon Butter (unsalted, room temperature)
For topping
- 1 tablespoon Butter (unsalted, room temperature)
- 2 tablespoon Powdered sugar (or icing sugar)
Instructions
Make the dough in the stand mixer
- Add the wet and dry ingredients (for the dough* list) to the bread machine pan.¾ cup Milk, 3 tablespoon Butter, 2 ½ cup All-purpose flour, 3 tablespoon Organic cane sugar, ¾ teaspoon Salt, ½ tablespoon Instant yeast
- Select and start the dough cycle.
- Once the dough cycle is complete, place the dough on a lightly floured surface.
Shaping the dough
- Divide the dough into 4 equal parts, preferably by weight, and make balls of each.
- Keep the rest of the dough balls covered while working on one of the dough balls.
- Roll the dough ball to about 3-4 millimeter thickness, and about 10-11 inch diameter.
- Place a 10-inch plate on it and cut out the edges with a knife.
- Let the round dough disc rest for about 5 minutes and then lift it and keep it on a plate or silicone mat.
- Continue with the remaining 3 dough balls and follow the above two steps.
- Place one of the rolled discs on a silicone mat or parchment paper.
- Apply the butter on top of the rolled dough with the help of a basting brush.2 tablespoon Butter
- Mix sugar and cinnamon powder in a bowl and apply it generously on top of the dough and spread it evenly.⅓ cup Brown sugar, 1 ½ teaspoon Cinnamon powder
- Place the second rolled disc on top of the first one so that it covers it completely.
- Similarly apply butter and spread the cinnamon and sugar mixture.
- Continue with the other 2 rolled doughs similarly and do not apply anything on top of the last disc.
- Make an indentation with a glass or a bowl of about 2 inches in diameter at the center of the stacked dough sheets.
- Carefully cut the dough into 16 equal parts touching the circumference of the indentation.
- Take 2 portions and roll them outwards twice and then join their edges.
- Cover the star bread with a plastic wrap and let it rest for about 30-40 minutes.
Baking star bread
- Preheat the oven to 350°F.
- Bake the star bread uncovered for about 20 minutes or until it is golden brown in color.
- Remove the tray from the oven.
Topping
- Apply butter with a basting brush while the star bread is warm.
- Sprinkle some icing sugar.
Notes
- For consistent results, weigh the flour while making the dough.
- Bread flour or all-purpose flour can be used to make star bread.
- The dough can also be kneaded in a stand mixer and then proofed in the instant pot or oven for about 1 hour before shaping into rolls.
