
Air fryer stuffed peppers are a great side dish and they can even be served as an appetizer. These Indian-style vegetarian stuffed peppers are made with a filling of potato, paneer, and spices.
When you make these no-rice stuffed bell peppers in the air fryer, your kitchen will smell so good. They are perfect to serve at a party, potluck, or enjoy with your meals.
This is a gluten-free recipe and can be adapted to make it vegan. This air fryer stuffed pepper recipe is made without rice. It uses very little oil, in fact, you can skip oil completely if you wish to.

Ingredients
These Indian-style stuffed peppers are made with a filling of boiled potatoes, grated paneer, chopped cashews, and raisins. Spices like red chili powder, garam masala, coriander powder, and dry mango powder give it a delicious flavor.
It is best to use Yukon gold or Red potatoes to help the mixture bind well. Also, either homemade paneer or store-bought paneer works well. When using store-bought ones, I like to use the Gopi or Verka brand paneer.
Any colored bell peppers can be used to make this recipe. I have used green ones. It is best to use the small-size peppers but you can also make it with other sizes as well.
Very little oil is needed to coat the peppers and the top of the stuffing to prevent them from becoming dry.

Instructions
The first step is to prep all the ingredients. Start with boiling the potato in the instant pot or in the microwave.
While the potatoes are cooking, rinse the bell peppers with water and pat dry them. Cut them into halves vertically and remove the stem, whites, and seeds from the inside. Grate the paneer with a hand grater or a food processor.
Once the potatoes are done, let them cool down and then peel and cube them.

In a mixing bowl, mix all the ingredients including potatoes, paneer, cashews, raisins, coriander powder, garam masala, dry mango powder, salt, and coriander powder.
Mix everything well with your hands into a soft dough ball. Taste the mixture and adjust the ingredients as per taste. Divide the mixture into equal portions and stuff each half of the bell pepper firmly.

With the help of a basting brush, apply some oil on top of the bell pepper and the stuffing. This will help to prevent it from drying.
Preheat the air fryer to a temperature of 390°F. Place the stuffed bell peppers into the air fryer basket and air fry them for about 8 minutes. They will be slightly golden brown and tender. This is a good sign that they are done.
Variations
These Indian-style stuffed bell peppers are gluten-free and made with no rice.
- Vegan - to make it vegan, you can skip paneer and use tofu, or just use potatoes.
- Cheese - you can grate some mozzarella cheese or cheddar cheese and put it on top of the stuffed peppers and then air fry them.
Serving suggestions
These stuffed peppers are a great addition to Indian meals and are best served as a side dish. You can eat it with roti, puri, or paratha.
They can also be served as an appetizer. You can cut them into bite-size pieces and serve them with some tomato ketchup or green chutney.

I have made these stuffed peppers in the 4 qt. Instant Vortex Plus Air Fryer. They can be made in any type of air fryer, be it basket style or tray style, or any size.
Depending on your air fryer and the number of stuffed peppers you want to roast, you may have to air fry them in multiple batches.
Storage
These stuffed bell peppers are absolutely delicious and best when served warm. If you have leftovers, you can store them in the fridge in an airtight container.
Refrigerated stuffed peppers can be reheated in the air fryer at 350°F for 1-2 minutes or in the microwave.
You can also freeze them in freezer bags or freezer-safe containers. You can thaw and reheat them in the microwave before serving.
Top tip
I have used small size bell peppers. Depending on the size of the peppers you use, the air frying time may vary a little.

Air Fryer Stuffed Peppers
Ingredients
- 2 small Bell pepper (halved vertically, seeds removed)
For filling
- 1 medium Potato (boiled, peeled, and cubed, 150 grams)
- ½ cup Paneer (grated, 50 grams)
- 1 tablespoon Raisins
- 1 tablespoon Cashews (raw, unsalted, chopped)
- ½ teaspoon Salt
- ½ teaspoon Dry mango powder
- 1 teaspoon Coriander powder
- ¼ teaspoon Red chili powder
- ¼ teaspoon Garam masala
For brushing
- 1 teaspoon Oil
Instructions
Prepare the filling
- In a mixing bowl, add all the "filling" list ingredients.1 medium Potato, ½ cup Paneer, 1 tablespoon Raisins, 1 tablespoon Cashews, ½ teaspoon Salt, ½ teaspoon Dry mango powder, 1 teaspoon Coriander powder, ¼ teaspoon Red chili powder, ¼ teaspoon Garam masala
- Mix everything well and form a soft ball.
- Divide the mixture into 4 equal parts.
Stuffing bell peppers
- Coat oil on the outside of the bell pepper with a basting brush.2 small Bell pepper
- Fill each bell pepper half with the mixture and press it to make it firm.
- Apply oil on top of the stuffing with a basting brush.1 teaspoon Oil
Air fry stuffed peppers
- Preheat the air fryer to 390°F.
- Place the stuffed peppers in the air fryer basket.
- Air fry for 8 minutes at 390°F.
- After 4-5 minutes, turn the direction of the peppers to ensure they are cooked evenly from all sides.
- Continue air frying for the remaining time.
- Check the peppers are tender and that is a sign they are done.
- Transfer the peppers to a serving plate with the help of kitchen tongs.
