    French dinner rolls, are crusty and chewy yeast rolls, perfect for any occasion. These classic dinner rolls have an airy texture with a lightly golden crust, making them a delightful addition to any meal. This easy French dinner roll recipe will guide you through baking these elegant and flavorful rolls at home. Enjoy these warm, comforting rolls with soups, salads, or as a dipping bread.

    Ingredients

    French dinner rolls require only basic ingredients like bread flour, instant yeast, water, and salt. It does not use oil or sugar. The water must be lukewarm as it helps the yeast to activate.

    While baking the rolls in the oven, place a little water or a few ice cubes in a tray. This creates steam and gives the rolls a glossy texture.

    If using a stand mixer, add all the ingredients in the bowl and knead with dough hook for about 12 minutes. Shape the dough into a ball and place it into a bowl. Let it rise into a warm place for about 45-60 minutes until it doubles in volume. Check out how to make dough in stand mixer.

    Step 1: Make dough in the bread machine or stand mixer and let it go through first rise.

    Step 2: Divide the dough into 15 equal parts and shape them into smooth balls.

    Once the dough cycle is complete, transfer the dough onto a lightly floured surface and divide it into 15 pieces of about 46 grams each. Shape them into smooth balls by tucking all the edges together to the bottom side. Place them in a baking tray lined with parchment paper and spacing them about an inch apart.

    Cover the tray with a cling wrap or a kitchen towel and let it rise in a warm place for about 45 - 60 minutes or until they are about triple in volume.

    Preheat the oven to 400°F. Remove the food wrap and bake the rolls for about 20-22 minutes until they are lightly golden brown in color.

    You can serve them warm with some butter or allow them to cool down.

    Substitutions

    • Flour - bread machine flour and all-purpose flour can be used interchangeably.

    Variations

    French bread or French baguettes can be made similarly, it can be baked in the bread machine or the oven.

    Equipment

    I make these French dinner rolls often and use the Zojirushi bread machine, Hamilton Beach bread machine, or the KitchenAid stand mixer to make the dough.

    A food scale helps in weighing the flour which gives consistent results. To make the rolls softer and lighter, sift the flour with a sifter. Any large non-stick baking tray of 15 inch by 11 inch works well to bake the rolls in the oven.

    Storage

    French dinner rolls can be stored at room temperature in a bread box or an airtight container. If you plan to store it longer, it is best to freeze them in ziplock bags. When you want to use it, you can warm them in the oven for about 15 minutes at 350°F.

    Top Tip

    • Weigh the flour for consistent results. Scooping flour from a bag can add too much quantity and make the dough dense.
    • While baking the rolls in the oven, place a little water or a few ice cubes in a tray. This creates steam and gives the rolls a glossy texture.

    • 1 cup + 2 tbsp Water (warm, microwave 20 seconds)

    • 1 teaspoon Salt
    • 3 ½ cup Bread flour (420 grams or all-purpose flour)
    • 2 ¼ teaspoon Instant yeast (7 grams)

    Instructions

    Option 1: Make dough in bread machine

    • Place the wet and dry ingredients in the order required by your bread machine.
      1 cup + 2 tbsp Water, 1 teaspoon Salt, 3 ½ cup Bread flour , 2 ¼ teaspoon Instant yeast
    • Close the lid and select the "dough" cycle.
    • Once the cycle completes, remove the dough from the pan on a lightly floured surface.

    Option 2: Make dough in stand mixer

    • Place the wet and dry ingredients into the stand mixer bowl.
      1 cup + 2 tbsp Water, 1 teaspoon Salt, 3 ½ cup Bread flour , 2 ¼ teaspoon Instant yeast
    • Attach the dough hook and knead on setting 2 for about 12 minutes until the dough is well kneaded and attaches to the hook.
    • Make a smooth dough ball, apply some oil to the bottom of the bowl and place the dough ball in it for rising.
    • Cover the bowl and keep it in a warm place for about 60 minutes until the dough rises and becomes double in volume.
    • Remove the dough from the bowl on a lightly floured surface.

    Shape dough to make rolls

    • Divide the dough into 15 equal parts of about 46 grams each.
    • Shape them into smooth balls and tuck all the edges to the bottom side to make it smooth from the top.
    • Place them in a 15-inch by 11-inch baking tray, about an inch apart, lined with parchment paper.
    • Cover with a food wrap or a kitchen towel so that it does not dry up.
    • Allow it to rise for about 45-60 minutes until it has about tripled in volume.

    Bake in the oven

    • Preheat the oven to 400°F.
    • Remove the food wrap gently and then place the baking tray in the oven.
    • Bake for about 20-22 minutes on 400°F or until the crust is golden brown in color.
    • Take the baking tray out of the oven.

    Notes

    • Sifting and weighing the flour helps make the bread soft. Sifting is optional, however, weighing the flour gives consistent results.
