    Chocolate dipped strawberries or strawberry bites is one of the easiest no bake 2-ingredient desserts that can be made from scratch in under 30 minutes. It can be made with white chocolate or dark melting chocolate and decorated with sprinkles and icing.

    They can be stored in the freezer for up to a month. Frozen chocolate-dipped strawberries are handy when you are craving something sweet, you can just take out as many as you need from the freezer and enjoy the sweet treat.

    I have used the instant pot as a double boiler to make these chocolate dipped strawberries at home from fresh strawberries and then frozen them.

    Ingredients

    Chocolate-covered strawberries are a gluten-free 2 ingredient dessert. However, to decorate it, other ingredients like sprinkles and colorful icing can be used.

    To make this easy chocolate dipped strawberries you will need fresh strawberries, white or dark melting chocolate chips, and optionally some sprinkles and icing.

    If you plan to freeze the chocolate-dipped strawberries then it is best to cut off the greens of the strawberries.

    Instructions

    Although it may sound daunting to make chocolate-dipped strawberries at home from scratch, it is indeed quite easy. First, rinse the strawberries with cold water and then pat them dry using a kitchen towel.

    Then melt the chocolate in a microwave or a double boiler. You can use an instant pot as a double boiler to melt the chocolate.

    Melting chocolate chips in an instant pot is very easy and convenient as it can be used as a double boiler. Pour about 2 cups of water into the instant pot liner and turn the saute mode on the normal setting for 10 minutes.

    Place a glass bowl or a stainless steel bowl on top of the liner. You want to ensure the bowl sits on the liner and does not go inside it, or else it can get stuck and will be difficult to remove.

    Put the melting chocolate wafers or pieces of the melting chocolate bar. In a few minutes, the chocolate will start melting. Mix it with a spatula and continue mixing intermittently until the chocolate is completely melted and becomes smooth in texture.

    In the meantime, also keep an eye on the water, if it starts boiling, turn the instant pot off by pressing the cancel button. Once the chocolate has melted, you can turn off the saute button and turn it on as needed to keep the chocolate melted.

    Hold the strawberry from the top (green leaves) and dip it in the melting chocolate from the other end. Turn the strawberry to allow the chocolate to coat as much as possible.

    If you plan on freezing the chocolate-dipped strawberries and have cut off the greens then you can use a fork to completely immerse the strawberries into the melted chocolate.

    Place it on a tray lined with wax paper and allow it to cool down. Refrigerate the strawberries for about 30 minutes and then freeze them. Once they become hard, you can store them in a ziplock bag.

    Variations

    You can get creative and decorate the strawberries as per your liking with sprinkles while the chocolate coating is still wet. Once the coating dries, strawberries can be decorated with colorful icing.

    I also like to coat half the strawberries with white chocolate and the other half with dark. For this, the dark chocolate covering must completely dry, then dip the chocolate in melted white chocolate halfway and allow it to dry once again.

    Equipment

    This chocolate-covered strawberries recipe is very easy to make using the instant pot as a double boiler. I have used a 6 qt. instant pot and a stainless steel bowl that sits well on the top of the liner. An oven-safe glass bowl will work well too.

    Just ensure that the stainless steel or glass bowl sits on the instant pot liner and does not go inside it, else it can get stuck and be difficult to remove.

    Storing suggestions

    Chocolate strawberries can be stored at home and stay fresh at room temperature for a day. However, if you want to store them longer, you can refrigerate them for 2-3 days. But they are just too tempting to last that long!

    To freeze the chocolate-dipped strawberries, once they are dried up, freeze them in a tray in the freezer. Once they harden, store them in a ziplock bag in the freezer for up to a month.

    When you plan to eat it, take out as many as you want and keep it on the counter, and allow it to come to room temperature.

    FAQ

    Can you make chocolate-covered strawberries with frozen strawberries?

    No. Frozen strawberries should not be used to make chocolate-dipped strawberries. They are very soft and have a lot of moisture and will not hold the chocolate on them. They will end up being mushy and soggy.

    • Sprinkles (optional)

    Prep the strawberries

    • Place a stainless steel or a glass bowl over the instant pot.
    • Put melting chocolate wafers in the bowl.
    • Mix the chocolate wafers with a spatula until it is melted and smooth.
    • Turn the saute mode to low. (if water starts boiling, turn off the instant pot by pressing cancel)

    • Line a tray with wax paper.
    • Hold the strawberry from the top green part and dip it into the melted chocolate. (if you cut the greens then use a fork to dip the strawberries completely into the chocolate)
    • Turn it sideways so that the chocolate gets coated evenly on all sides.
    • Place the chocolate-dipped strawberry on the tray lined with wax paper.
    • Optionally decorate it with sprinkles.
    • Repeat above steps for all strawberries one by one.
    • Allow them to dry for 10-15 minutes or in the fridge for 30 minutes.
    • Freeze the strawberries for 30 minutes in the freezer.
    • Transfer to a ziplock bag and store it in the freezer for up to a month.

    Notes

    Making chocolate-coated strawberries using microwave

    • Defrost the chocolate chips for 60 seconds in the microwave, mixing every 15 seconds. Mix well until smooth.
    • Hold the strawberry from the top green part and dip it into the melted chocolate. (if you cut the greens then use a fork to dip the strawberries completely into the chocolate)
    • Turn it sideways so that the chocolate gets coated evenly on all sides.
    • Place the chocolate-dipped strawberry on the tray lined with wax paper.
    • Optionally decorate it with sprinkles.
    • Allow them to dry for 10-15 minutes or in the fridge for 30 minutes. 
    • Freeze the strawberries for 30 minutes in the freezer and then store them in a ziplock in the freezer.
