I have made this vegan pumpkin spice latte using instant coffee granules and there is no brewing involved. You can make it instantly and enjoy it whenever you want.
Ingredients
Pumpkin spice latte is absolutely easy to make and it needs only 5 ingredients - instant coffee, almond milk, pumpkin pie spice, pumpkin puree and sugar or sweetener of choice.
Classic Nescafe instant coffee is my favorite however any other brand of instant coffee will work well. You can adjust the amount of coffee and pumpkin pie spice to adapt to your taste.

I also prefer using the almond milk but any other plant based milk will work. If you are using dairy whole milk then reduce the milk by half and equal amount of water.
Homemade pumpkin puree or store bought canned one will work fine. Also, you can adjust the amount of puree as per your taste.
Instructions
Making vegan pumpkin spice latte with instant coffee takes just about 5 minutes! All you need to do is add all the ingredients to a small or medium size saucepan and bring it to a boil on medium heat. Mix it well and take it off the heat.
Put the latte into a high speed blender like Vitamix and blend it for about 15 seconds or until it is frothy. You can also use a milk frother instead of a blender. Pumpkin spice latte is now ready.

Serving suggestion
You can serve it in coffee mugs and sprinkle some pumpkin pie spice on top. You can also add some grated chocolate or a few granules of instant coffee for flavor.
Substitutions
Sweetener: use maple syrup, monk fruit sugar, or your favorite sweetener.
Milk: use any plant based milk.
Pumpkin puree: use homamde or store bought puree.

Equipment
- Blender (or frother)
Ingredients
- 2 cup Almond milk (or other plant based milk)
- 2 teaspoon Organic cane sugar
- 1 teaspoon Instant Coffee
- 1 teaspoon Pumpkin pie spice
- 2 tablespoon Pumpkin puree
Instructions
- Put all the ingredients in a medium size saucepan.2 cup Almond milk, 2 teaspoon Organic cane sugar, 1 teaspoon Instant Coffee, 1 teaspoon Pumpkin pie spice, 2 tablespoon Pumpkin puree
- Bring it to a boil on medium heat.
- Mix well with a spoon.
- Blend it on high speed in a blender (or use frother instead).
- Pour into cups and sprinkle some pumpkin pie spice on top.
