    Making your own almond milk at home is easier than you think, especially with the power of a Vitamix blender. This simple recipe will walk you through the process of creating delicious and nutritious homemade almond milk effortlessly.

    Almond milk is a plant based and dairy-free milk. It is a perfect choice for vegans as well as those who are lactose intolerant. It is easily available in the grocery stores however most of them have additional preservatives added. Also, the organic ones are quite expensive.

    I have been making almond milk at home for quite a while now and use it in baking, with cereal, oatmeal, and more.

    Ingredients

    For making almond milk whole raw almonds, water, and some salt is all you need. Vanilla extract or dates can be added to it for more flavor or sweetness, but it is not required to make almond milk.

    A ratio of 1:4 of almonds to water works perfectly well for homemade almond milk.

    I prefer soaking the almonds before making almond milk. Soak whole raw almonds for 6-8 hours or overnight in enough water. They will puff up and it will become very easy to take the skin off. Remove the skin by pinching and sliding it off with your fingers. It only takes a couple minutes.

    After removing the skin, add the almonds, water, and salt to the Vitamix blender. If you have preset settings, use the smoothie setting to make the almond milk. Otherwise, start blending at low speed and gradually increase to highest speed. Blend it on the highest setting for about 45 seconds.

    Most of the times, I do not strain the almond milk, it is rich, smooth, and creamy. However, when I have to strain, I use this amazing stainless steel coffee filter. The pulp stays in the filter, and you get almond milk, just like the store-bought ones. I store the pulp in an airtight container and use it in my oatmeal breakfast.

    Variations

    Sweetener: dates, maple syrup, agave, or any sweetener of choice can be added if you like sweetened almond milk.

    Flavor: vanilla extract can be added if you prefer vanilla flavor.

    Equipment

    I use my Vitamix blender to make almond milk and it turns out perfect and creamy. Vitamix blender is very powerful and blends into a very smooth and fine consistency. Other high-speed blenders may not give the same results.

    I did think about investing in a nut milk maker but realized, all I need is a good filter along with Vitamix blender. Nut milk bags and cheesecloth are a bit cumbersome and challenging to use. I found this stainless-steel coffee filter and I am so impressed with it. I filter the homemade almond milk with it and eat the almond pulp with my oatmeal.

    Storage

    It is best to store almond milk in a glass jar or Mason jar with lid tightly closed. Almond milk stays good for 3-4 days, so only make how much you would consume. If stored for longer, it can turn slimy and rancid. Strained one stores longer than the unfiltered one.

    When stored, almond milk tends to separate the solids and liquid, so shake the jar well to mix it before using.

    Ingredients

    • ½ cup Almonds
    • 2 cup Water (more for soaking almonds)
    • ⅛ teaspoon Salt

    Instructions

    • Soak almonds for about 6-8 hours in water.
    • Discard the water and peel the almonds. They should pop out easily by pinching and pulling them between your fingers.
      ½ cup Almonds
    • In Vitamix blender, add peeled almonds, water, and salt.
      2 cup Water, ⅛ teaspoon Salt, ½ cup Almonds
    • Gradually start from low to high speed until almonds are well blended. (about 45-60 seconds). Or use the smoothie setting.
    • Optionally use the stainless steel coffee filter and filter the almond milk.
    • Press the pulp to squeeze out as much milk as possible.
    • Store the almond milk mason jar or glass jars, covered with lids, in the refrigerator.

    Notes

    • For filtering - nut milk bags can also be used.
    • No filter - Vitamix blends the milk very fine, you can skip the filtering process.
    • No soak - If you are in a hurry, use the whole almonds with the skin and blend them together.
