Watermelon is one of my favorite summer fruits as it is a great way to keep hydrated in the hot season. Kids love to eat it and a watermelon mocktail with soda makes for a refreshing non-alcoholic drink for many occasions like parties, picnics, bbq parties, or no occasion at all.

How to select a good watermelon?
A good watermelon is a key to a good watermelon juice mocktail. You must select a watermelon which is even in shape and must be heavy in weight when you lift it, this indicates that it is juicier.
Another important visible mark is the yellow spot on the watermelon, which indicates that it sat on the ground and was ripened in the sun. To read more in detail, you can refer this article on Wikihow
Ingredients to make watermelon soda
The best part of making fresh watermelon soda is that it requires only a handful of ingredients. A fresh watermelon, cubed for blending in your favorite blender. I like to use Vitamix but you can use any other blender like NutriBullet.
If you like it sweeter, a sweetener can be added. You can use sugar or any low-calorie sugar substitutes. I use Blue Agave which is a low glycemic plant-based sweetener.
Other ingredients include salt, club soda, and mint leaves. You can also make your own soda at home using a soda maker. It just takes a few seconds and you can add fresh soda to your favorite drinks.

How to make a refreshing watermelon mocktail?
This watermelon mocktail recipe only takes a few minutes. Blend the watermelon cubes in the blender. Optionally you can strain the juice using a strainer or nut milk bag.
I usually skip this step but sometimes kids can be really fussy, so have to follow this extra step. In serving glasses, add some sweetener or Blue Agave nectar over ice.
Add a pinch of salt and then pour the fresh watermelon juice and soda. Garnish it with a few mint leaves for a refreshing flavor.

Instead of using soda, I use vanilla ice cream in a blender. Makes a great watermelon 🍉 ice cream that is better than the store bought that has candy seeds in it. I wish there was a bottled watermelon juice that wasn't blended with other juices.
