    Thai pineapple fried rice is a famous Thai dish. It is one of my favorites along with Thai iced tea when I visit Thai restaurants. It is a perfect weeknight meal and leftovers can be enjoyed the next day!

    I would not call this authentic since it is a vegan version and does not use fish sauces. But it tastes delicious and is equally easy to make. It is a crowd-pleaser dish for any party or potluck!

    Ingredients

    It is best to use long-grain rice to make Thai fried rice. I like to use basmati rice, however, jasmine rice works well too. Also, I have used freshly cooked rice but fried rice can be made with leftover rice too.

    Other ingredients consist of vegetables such as bell peppers, carrots, peas, and green onions. I have used fresh pineapple but canned ones will work fine too. The flavor comes from curry powder. If you find Oriental curry powder, it will be great otherwise any curry powder will work equally well.

    You will also need some soy sauce. For the gluten-free version, you can use tamari sauce. You can adjust the spiciness by adjusting the chili flakes. A few raw cashews add crunch and raisins are optional.

    Instructions

    To make Thai pineapple fried rice, the veggies like bell pepper and carrots are chopped into thin slices. Pineapple is cut into small chunks. I like to use the Komachi knife for chopping.

    If you do not have leftover rice, you can also make it in a matter of minutes. In a saucepan, boil enough water, on medium heat, to cook the rice. Allow the water to come to a rolling boil and then carefully add the soaked rice. Allow the rice to cook for about 12 minutes, it should be al dente.

    Drain the water and spread the rice on a plate and allow it to cool down. This ensures the rice does not get overcooked and mushy. While the rice is cooling down, stir-fry the veggies for fried rice in a wok or a frying pan.

    Heat a wok on a high flame and add some oil. Once the oil is hot, add the green onion whites followed by carrots and bell peppers. Saute for about a minute and add chili flakes, soy sauce, and curry powder and mix it well. Add peas, cashews, and raisins and continue cooking until veggies are only slightly crunchy.

    Finally, add the basmati rice, salt, and pineapple and mix gently. Cook for about a minute, turn the stove off, and garnish the Thai pineapple fried rice with chopped green onions.

    Optionally steam some silken tofu or firm tofu and add it to the fried rice while serving.

    Serving suggestions

    It is best to serve Thai pineapple fried rice when it is hot. I like to enjoy it with Thai iced tea.

    Storage

    Thai fried rice can be stored in the fridge for 3-4 days. If it becomes dry, add a little bit of water while reheating it in the microwave or on the stove. Cover the fried rice with a lid while reheating to ensure that it absorbs moisture.

    Equipment

    • Heavy bottom pan

    Ingredients

    • 1 cup Rice (or 3 cup cooked rice, Basmati or Jasmine)
    • 2 large Garlic cloves (chopped)
    • 2 medium Bell pepper (thinly sliced)
    • 1 large Carrot (peeled and julienne cut)
    • 1 cup Peas (fresh or frozen)
    • 2 cup Pineapple (fresh, chopped)
    • ยผ cup Cashews (raw)
    • 2 tablespoon Raisins
    • ยผ cup Green onion whites (chopped)

    Oil and spices

    • 1 tablespoon Oil
    • 1 ยฝ tablespoon Curry powder (to taste)
    • 2 tablespoon Soy sauce (or tamari sauce for gluten-free)
    • 1 ยฝ teaspoon Salt (to taste)
    • ยผ teaspoon Red chili flakes (to taste)

    Topping

    • 14 Oz. Silken Tofu (or firm tofu)
    • ยผ cup Green onions (Chopped)

    Instructions

    • Cook rice as per instructions and let it cool down. Or use refrigerated rice.
      1 cup Rice
    • Heat a heavy bottom pan or wok on medium high heat.
    • Once the pan is hot, add oil.
      1 tablespoon Oil
    • Once oil is hot, add garlic and sautรฉ for a few seconds.
      2 large Garlic cloves
    • Add onion whites, carrots and bell pepper. Cook for a few minutes, they should be slightly crunchy.
      2 medium Bell pepper, ยผ cup Green onion whites, 1 large Carrot
    • Add peas, cashews, and raisins and mix well.
      1 cup Peas, ยผ cup Cashews, 2 tablespoon Raisins
    • Add soy sauce, chili flakes, and curry powder and mix well.
      1 ยฝ tablespoon Curry powder, 2 tablespoon Soy sauce, ยผ teaspoon Red chili flakes
    • Add pineapple, rice, and salt and mix well.
      2 cup Pineapple, 1 ยฝ teaspoon Salt
    • Adjust salt, red chili flakes, and curry powder if needed.
    • Garnish with green onion greens.

    Add tofu

    • Steam tofu in a steamer.
      14 Oz. Silken Tofu
    • Add tofu while serving.
