
These vegan apple muffins are a perfect breakfast, snack or dessert to make when you are craving something sweet, have a lot of apples to use up, or just want to enjoy some fall flavors. They are easy to make and are soft and moist in texture.
Ingredients
To make this easy vegan apple muffin recipe, you can use any apple, and the flavor will change a little based on how tart or sweet the apples are. I have used the honey crisp apples but any variety like Ambrosia, Granny Smith, Delicious, Red, or Fuji would work fine.
All-purpose flour, almond milk, sugar, oil, and vinegar are used along with some baking soda and baking powder as a leavening agent. Cinnamon powder adds a lot of flavor and gives a distinct fall aroma to the apple muffins.

Instructions
Peel, core, and cut the apples into small pieces. You can decide how large or small of size you like for the chopped apples.
With the help of a whisk, mix all the wet and dry ingredients except the apples. Add the chopped apples and fold them gently with a spatula. Pour the apple muffin batter into muffin pan lined with muffin liners to โ rd capacity each.
Place the muffin pan in the preheated oven at 350ยฐF. Bake them for about 28-30 minutes at the temperature of 350ยฐF or until they become light golden brown from the top.

You can insert a toothpick at the center of the muffin to check for doneness. If it comes out clean, apple muffins are done, or you can bake them for a few more minutes.
Substitutions
- Plant-based milk - use dairy-free milk or any other plant-based milk.
- Brown sugar - use brown sugar instead of cane sugar.

Equipment
To make the apple muffin batter, a whisk helps in mixing well. You can also use a hand blender with a whisk attachment or a hand mixer.
I have used muffin tray with paper muffin liners, however reusable silicone muffin holders with tabs can also be used instead.
Storage
these vegan apple cinnamon muffins can be stored at room temperature for 3-4 days in an airtight container.
Top tip
To check if the vegan apple muffins are done, insert a toothpick at the center of the muffin and see if it comes out clean, that means it is well cooked. Else you can bake them for a few more minutes.

- 2 medium Apples (I have used Honeycrisp, use any)
- ยพ cup Almond milk (or any plant based milk)
- โ cup Oil
- 1 teaspoon Vinegar
Dry ingredients
- 2 cup All purpose flour (240 grams)
- ยพ cup Organic cane sugar
- ยฝ teaspoon Baking Soda
- ยฝ teaspoon Baking powder
- 1 teaspoon Cinnamon powder
- Pinch of Salt
Instructions
- Preheat oven to 350ยฐF while you work on the mix.

- Mix everything well with a whisk.
- Add the chopped apples and mix gently with a spatula.
- Pour the batter into the muffin liners up to โ rd capacity.
- Bake in the oven for about 28-30 minutes at 350ยฐF or until the top is slightly golden brown.
- Insert a toothpick at the center of the muffin to check for doneness. If it does not come out clean, then bake for a few more minutes.
- Remove the muffin tray from the oven and allow them to cool down for 15-20 minutes before serving.
Notes
- It is best to weigh the flour using a digital food scale.
