I always enjoyed fruit cake since my childhood and I make it often for my kids and they love it. It is a perfect cake to make for Christmas and enjoy it with your family during the holidays.
I have perfected this fruit cake recipe in the bread machine and it turns out light, soft, and delicious. It can be enjoyed as a snack or a dessert.
Ingredients
I have made this eggless fruit cake with tutti frutti, or candied fruit. It is also referred to as tutti frutti cake.
For leavening, baking soda, baking powder, and vinegar are used.
Other cake ingredients are all purpose flour, sugar, milk, and vanilla extract for flavor.
I like to use oil instead of butter as it makes the cake light.
Instructions
I always recommend to sift the flour while making a cake to ensure the cake is light and there are no lumps while mixing.
Except the candied fruits, put all the wet and the dry ingredients in the bread machine pan in the order recommended by your bread machine manufacturer. Select and start the quick bread cycle. While the machine is mixing the ingredients, ensure that all the flour from sides of the container gets mixed as well.
Step 1: Add wet and dry ingredients except the candied fruits.
Step 2: Start quick bread cycle. Push any flour on the sides to ensure a good mix.
Based on my learning from few iterations, the "cake" cycle works well but it needs extra baking. But the quick bread cycle works perfectly well and is truly a one-touch process.
So now I make a cakes on the "
Step 3: Add the tutti frutti or candied fruits.
Step 4: Fruit cake is ready.
A delicious and mouth-watering fruit cake is ready once the cycle is complete. Insert a toothpick or a butter knife in the middle of the cake . If it comes out clean, cake is ready else it may need additional baking for few more minutes.
Variations
If you do not have tutti frutti or candied fruits, you can use raisins. At times, I skip them entirely to make a delicious vanilla cake.
Serving suggestions
Let the cake cool in the bread machine pan for at least 15-20 minutes before taking it out otherwise it will break.
Place it on a cooling rack to let it cool down completely. Slice it with an electric knife or a serrated knife and enjoy it as a dessert or a snack.
It is great for after school snack or holiday treat and dessert. You can also gift it during the holidays.
Equipment
I have made this eggless tutti frutti bread in the 2 lb. Hamilton Beach bread machine. Any bread machine with quick bread cycle will work well to make cakes in the bread machine.

Doesn't the Batter get overmixed? How long is the kneading in your bread machine?
Alpa Jain says
Hi Snigdha,
In my machine, the batter mixes for the first 10 minutes in quick bread cycle. It doesn’t over mix.
