Ingredients to make rosemary sweet potato fries
Sweet potato fries require very few ingredients and it is a versatile side dish that can be seasoned as per one's preference. The very basic form requires just a little bit of olive oil and salt.
However, rosemary, garlic or other herbs can be added to enhance the flavor. If you like a bit of spice then you can sprinkle some black pepper powder or even red pepper powder. I usually avoid spicy herbs to make it a kid-friendly dish.
How to cut sweet potatoes to make fries?
First chop and discard the tail ends of the sweet potato and then remove the skin using a peeler.
Sweet potatoes can be a bit challenging to slice and cut, so you need a good knife. I personally use the Komachi knife and it is a breeze to cut the sweet potatoes into the desired size.
Sweet potatoes can be cut into desired thickness, however, cutting it thick gives good results and they do not get burnt or dry while cooking. I usually cut it into a 1 cm X 1 cm cross-section and 2-3 inches in length.

How to make sweet potato fries in air fryer?
Once the sweet potatoes are cut into chunks of the desired length, wash it thoroughly in cold water and let it dry using a strainer or kitchen tissue for a few minutes.
Once the excess water is gone, transfer it into a mixing bowl, add some olive oil, and some salt to taste. Optionally, add some pepper powder or herbs like rosemary or garlic and mix it well. Let it rest for 5-10 minutes.

Preheat the air fryer to 390 deg F and then place the sweet potato chunks in the air fryer, spreading it evenly in the basket. Avoid overcrowding so that the fries are cooked evenly.
Air fry the sweet potatoes for about 15 minutes, giving the basket a few shakes in between.
Serving sweet potato fries
Sweet potato fries can be served with some ketchup. If you like some heat then sprinkle some black pepper powder or red chili powder or alternately serve it with some hot sriracha sauce.

Storing sweet potato fries
It is best to eat the sweet potato fries hot and freshly cooked. However, at times you may have some leftovers.
You can easily refrigerate the leftovers for a couple of days and again reheat it in the air fryer. Only downside is that it may not be as fresh, crisp and juicy in taste as the first time around.

Unfortunately these fries were not crispy at all. I followed the recipe exactly. Not sure what I did wrong. Thx

Hi Angie,
Sweet potato fries will not be as crispy as the potato fries. To get the slight crispiness, ensure that they are well coated with oil and you can also cook them for 1-2 minutes extra.
Hope this helps.

Alpa
