    Sweet potato is a healthy, nutritious root vegetable loaded with vitamin A. It comes in a variety of colors and sizes. If you want to cook sweet potatoes then instant pot works like a charm.

    Cooking whole sweet potatoes can take longer but sometimes you want them ready quickly for a side, topping your salad or just making mashed sweet potatoes. You can steam cubed sweet potatoes in the instant pot in just a few minutes.

    How to peel sweet potatoes?

    Before cutting the sweet potatoes into cubes, it is best to peel them. It may sound tedious but it is quite easy to peel sweet potatoes with a vegetable peeler effortlessly in a matter of few minutes.

    How to cube sweet potatoes?

    Raw sweet potatoes can be hard to cut but a good knife can be a savior. I like to cut the sweet potatoes with a Komachi knife.

    To cut the sweet potatoes into cubes, first dice them into a thickness of the desired choice. I like to cut them about half-inch thick. Then stack 3-4 slices at a time and then cut them into an inch wide cubes.

    Can i peel sweet potatoes ahead of time?

    Yes, you can peel and cube raw sweet potatoes ahead of time. They can be stored in the fridge for 3-4 days. This is a great way to save time and cook them when you are ready.

    How do I steam diced sweet potatoes in instant pot?

    Thanks to the instant pot, steaming cubed sweet potatoes is a breeze and it just takes about 10 minutes.

    Pour a cup of water and place a trivet into the instant pot liner. I have used a 6 qt. instant pot, but larger ones will work as well. Place all the cubed sweet potatoes in a steamer rack on the trivet.

    Cook the sweet potatoes in the instant pot in high-pressure mode and then perform a quick release. If the size of the cubes is smaller, then it will take lesser time and vice versa.

    How long to cook cubed sweet potatoes in instant pot?

    The pressure cooking time of sweet potatoes will vary based on the size of the cubes. I have made cubes of about an inch in size and that takes 5 minutes of steaming on the high-pressure mode in the instant pot.

    If the cubes are cut smaller it can take about 3-4 minutes. In case after natural pressure release, the sweet potatoes are undercooked, you can pressure cook them once again for a minute or two and again perform a quick release.

    How long can cooked sweet potato last in the fridge?

    You can store cooked sweet potatoes in the fridge for 3-4 days. When you are ready to eat, simply reheat it in the microwave.

    Ingredients

    • 2 Sweet Potato (medium, 1 inch cubed)
    • 1 cup Water

    Instructions

    • Rinse, peel, and cut the sweet potatoes into about 1 inch cubes.
    • In the instant pot liner, pour 1 cup water.
    • Place a trivet in the instant pot liner.
    • Put the cubed sweet potatoes in a steamer basket.
    • Place the steamer basket with the sweet potatoes in the instant pot liner on top of the trivet.
    • Lock the instant pot lid with pressure valve in sealing position.
    • Cook on high pressure mode for 5 minutes.
    • Perform a quick release by turning the knob in venting position.
    • Insert a fork in one of the pieces and check if it is cooked.

    Notes

    The pressure cooking time will vary if the cubes are cut smaller or larger.
