    Veggie grilled wraps are delicious, easy to make, and great for meal planning. The vegetables are roasted in the air fryer and filled in the tortilla to make rolls. The wraps are then grilled until golden brown. Check out this vegan recipe to make veggie grilled wraps.

    Grilled veggie wraps are a great option for days you are looking for a light, quick and easy meal. They are nutritious, filling, and very easy to make. They taste absolutely delicious and can be made with vegetables of your choice.

    It is also great for meal planning as the roasted vegetables can be stored in the fridge and you can quickly make the wraps.

    These roasted vegetable wraps are vegan and can be made gluten-free as well. They are great for lunch, dinner, on the go lunch, or for weekend brunch.

    Ingredients

    Grilled veggie wraps are versatile and can be made with veggies of your choice. I have used assorted bell peppers, mushrooms, celery, spinach, onions, and zucchini. But you don't have to limit yourself to these. You can add other veggies or use frozen mixed vegetables.

    For seasoning, some olive oil, salt, and garlic powder are all you will need. But you can adapt it to your taste by adding some red chili flakes, serrano pepper, or black pepper.

    Instructions

    Once you have chopped the veggies, making the grilled veggie wraps is really very easy. The first step is to mix all the veggies in a mixing bowl. Add oil, salt and garlic powder, and toss the mixture to evenly coat it with the seasoning.

    Preheat the air fryer to 390ยฐF and put the vegetables in the air fryer basket. Roast the veggies for about 12 minutes and shake the basket after 6-7 minutes. Add spinach at the last and mix it well. Cook or just let it sit for a minute in the fryer basket.

    Roast the vegetables in the air fryer.

    Now it is time to make the wraps. Take a tortilla and place a good amount of roasted veggies in the center and roll it into a wrap. Place the wrap on the panini grill and apply some butter on it. Grill the wrap until golden brown and it is ready to eat ๐Ÿ™‚

    Substitutions

    This vegan veggie wrap is absolutely satisfying and it can easily be made gluten-free

    • Lettuce - instead of tortillas, you can use lettuce to make a lettuce wrap but you will not need any grilling.
    • Almond flour tortillas - use gluten free almond flour tortillas instead of regular wheat tortillas to make this gluten free.

    Variations

    These vegetable wraps are absolutely versatile and you can adapt it to your liking.

    • Spicy - add some serrano pepper while cooking the vegetables to add some heat into the dish. Chili pepper flakes can be sprinkled after roasting the vegetables. Another great option is to add a little bit of sriracha sauce in the veggies before grilling, or even serve it on the side.
    • Cheesy - add some grated cheese on the top of the veggies before rolling the wrap and grilling it. Pepper jack cheese can make it cheesy and spicy at the same time!
    • Kid friendly - skip the veggies that your kid does not like and maybe add more of his favorite ones.

    Equipment

    Making a veggie wrap requires a lot of chopping. A good sharp knife like the Komachi knife is indeed your friend in such a time.

    Roasting the vegetables in the air fryer makes the entire task easy and you are almost handsoff. So I really love cooking the veggies in the air fryer. However, you can also cook the vegetables by sauteing them in a pan on the cook top.

    Once you roll the wraps, you can grill them on a panini grill, or a griddle.

    Storage

    These vegetable wraps are very easy to make especially once the veggies are roasted. The roasted vegetables can be stored in an air tight container in the fridge for 3-4 days and work well for meal planning.

    When you are ready to eay, simple reheat the veggies in the air fryer or in the microwave and then fill them in the tortilla and optionally grill them.

    Ingredients

    • 2 count Bell pepper (assorted, sliced)
    • ยฝ cup Onion (sliced)
    • 1 count Zucchini (diced)
    • 2 stalks Celery
    • 1 cup Mushrooms (sliced)
    • 1 cup Spinach

    Salt, oil, and spices

    • ยฝ teaspoon Garlic powder (to taste)
    • 2 tablespoon Oil
    • 1 teaspoon Salt
    • ยผ teaspoon Black Pepper (to taste)

    For grilling

    • 6 count Tortillas
    • 1 tablespoon Butter (for coating tortillas)

    Instructions

    Air fry the vegetables

    • In a mixing bowl, add bell pepper, mushrooms, onions, celery, and zucchini.
    • Add oil, salt, and garlic powder to it and toss it well.
    • Preheat the air fryer to 390ยฐF.
    • Add the vegetables to the air fryer basket and cook for 12 minutes.
    • Shake the basket after 6-7 minutes and then continue cooking.
    • Once done, add and mix spinach to the veggies in the air fryer basket and cook for an additional 1 minute.

    Making grilled wraps

    • Preheat the panini grill.
    • Place some of the cooked veggies at the center of the tortilla and wrap the tortilla.
    • Sprinkle some pepper to taste.
    • Place the tortilla on the panini grill and cook for about 2-3 minutes until the wrap is golden brown in color.

      Looks tempting. One thing is not clear about the recipe whether we should use the โ€œair fryโ€ mode or โ€œRoastโ€ mode. My air fryer is oven style and it has both the options. Pls reply back.
