Ingredients
Lemongrass tea is made with only a few ingredients and the main ingredient is of course the lemongrass tea leaves. You might be able to find some fresh leaves in Asian grocery stores but if you can't, then there is always an option to use dried lemongrass tea leaves.
I have made this recipe with dried lemongrass tea leaves, ginger, mint leaves, lemon juice, and a sweetener. Lemon juice is optional and you can use a sweetener of your choice like agave, maple syrup, sugar, or jaggery.
Instant Pot instructions
Lemongrass tea is really easy to make. It can be made on the stovetop or in the Instant Pot. I like to make it in the Instant Pot as it requires no monitoring and I can plan it as per my schedule and use the delay timer to make this refreshing beverage when I need it.


To make lemongrass tea in the Instant Pot, pour water, ginger, mint leaves, and dried lemongrass tea in the Instant Pot liner. Pressure cook for 5 minutes and then allow the pressure to release naturally for 5 minutes. Release the remaining pressure manually by moving the pressure release knob into the venting position.
Stovetop Instructions
Lemongrass tea can be made on the stovetop by boiling some water in a saucepan until it comes to a rolling boil. Add the dried lemongrass tea leaves, ginger, and some mint leaves to the boiling water and then simmer it for about 5 minutes with the lid covered.


Strain the lemongrass tea into a teapot or a cup using a strainer. You can enjoy this beverage hot or cold. I like it hot in the winter and chilled in summer. The best part is you can use sweeteners of your choice like agave, maple syrup, sugar, or jaggery along with a few drops of lemon juice.

Serving suggestions
Lemongrass tea is best served with some sweetener of your choice and lime juice. It can be served hot in cold chilly weather or served chilled over some ice.
Storage
Making lemongrass tea is a breeze and does not take much time, so it can be made whenever you want to sip on this amazing drink. Well, sometimes you may have to store it or plan ahead by making it in advance.
Lemongrass tea stores well in the fridge for 3-4 days. It is best to add lemon juice and a sweetener when you are ready to serve it.

- 2 cup Water
- 2 teaspoon Lemongrass tea leaves
- 8 count Mint leaves
- ½ teaspoon Ginger
For serving
- 2 tablespoon Blue Agave sweetener (or sweetener of choice)
- ½ teaspoon Lime juice (optional)
Instructions
Lemongrass tea on stovetop
- In a small pot boil 2 ½ cup water on medium flame.
- Once it starts boiling, add lemongrass leaves, ginger, and mint leaves.
- Cover the pot with a lid and continue to simmer for 5 minutes.
- Strain the tea into cups using a fine tea strainer.
- Add sweetener of your choice and some lime juice.
Lemongrass tea in Instant Pot
- Pour water into the Instant Pot liner.
- Add lemongrass leaves, ginger, and mint leaves.
- Lock the Instant Pot with the release valve in the sealing position.
- Turn the Instant Pot on high-pressure mode for 5 minutes by selecting the pressure or the manual button on the high-pressure setting.
- Keep the "keep warm" setting on.
- Allow pressure to release naturally for 5 minutes and then release the remaining pressure by moving the pressure release valve in the venting position.
- Filter the lemongrass tea using a fine tea strainer into a teapot or cups.
- Add sweetener of your choice and some lime juice.

I live in Pennsylvania and have been coaxing my lemongrass that grew beautifully outdoors in the summer to live indoors over the winter.
My leaves were dry and needed to be trimmed back. This was the perfect solution for the leaves. I had enough for straight lemongrass tea, your recipe and another with apple cider and cinnamon stick.
I used local honey for a sweetener.
