Seed bread is a delicious and nutritious bread made with a variety of seeds. It is soft in texture and is a great alternative to basic bread like white bread and milk bread. It is vegan and you can add whatever seeds you like.
It is very easy to make seed bread in the bread machine as the bread machine does all the work of mixing, kneading, rising, and finally baking the bread on the press of a button.

Ingredients
Multi seed bread requires only a few basic ingredients to make bread and a variety of seeds. Basic bread ingredients include bread flour, oil, water, salt, sugar, and yeast.
Seeds like pepitas, sunflower seeds, flax seeds, chia seeds, poppy seeds, and sesame seeds. You can skip a few if you do not have all of them.
Instructions
Making seeds bread at home is very easy. If you use a bread machine, add all the ingredients in the bread machine pan in the order recommended by the bread machine manufacturer. Select and start the basic white bread cycle for 1.5 lb after selecting the crust color.
Baking in bread machine:
Step 1: Gather all the ingredients for seed bread.
Step 2: Add all the wet and dry ingredients into the bread machine pan in order.
Step 3: Watch the dough kneading for about 5-10 minutes and add a little water or flour if needed.
Step 4: Dough rising in the bread machine.
Step 5: Bread is baked in the bread machine.
Step 6: Let the bread cool down completely on a wire rack before slicing it.
Baking in oven:
Add all the ingredients in the bread machine pan in the order recommended by the bread machine manufacturer. Select and start the dough cycle. Remove the dough on a lightly floured surface and shape it into a log about 8 inches long with all the edges tucked on the bottom. The seamless side should be on the top in the pan.
Let it rise for about 45 minutes to an hour until it doubles in volume. Bake in a preheated oven at 350°F for 20 minutes. Once done, remove the bread from the pan and let it cool down completely before slicing it.
Substitutions
- Bread flour - all purpose flour or bread flour can be used interchangeably to make this recipe.
- Yeast - bread machine yeast or instant yeast can be used.

Serving suggestions
Multi seed bread is a great alternative to the basic white bread to make your morning toast or for making sandwiches. It is a perfect accompaniment to hot soups in cold weather especially Instant Pot butternut soup and Instant Pot pumpkin soup.
Equipment
I have made this delicious seed bread in Breadman bread machine as well as 2 lb. Hamilton breach Artisan bread machine. It will work fine with any bread machine on basic white bread cycle.
Dough can also be made in stand mixer and proofed in the Instant Pot. To bake the seed bread in oven a 9 inch by 5 inch pan works fine. Check out how to proof dough in Instant Pot.

Storage
Seed bread can be stored at room temperature for 3-4 days in a bread box or an air tight container.
To store it longer it is best to freeze bread in ziplock bags or freezer safe containers after slicing them. You can take as many as you need and toast them.
Top tip
Weighing flour using a digital food scale while making bread gives consistent results. Scooping flour out from a bag using measuring cups can add too much flour and make the bread dense.

- 1 cup Water (microwave 30 seconds)
- 4 tablespoon Oil
Dry ingredients
- 3 ½ cup Bread flour (420 grams, or all-purpose flour)
- 2 tablespoon Organic cane sugar
- 1 teaspoon Salt
- 2 ¼ teaspoon Instant Yeast (7 grams)
Seeds
- 2 tablespoon Pumpkin seeds (pepitas)
- 2 tablespoon Sunflower seeds (raw)
- 1 tablespoon Flax seeds
- 1 teaspoon Poppy seeds
- 1 tablespoon Sesame seeds
- 1 teaspoon Chia seeds
Instructions
Bake in bread machine
- Place the wet and dry ingredients in the order as required by your bread machine. (Yeast to be added last)1 cup Water, 4 tablespoon Oil, 3 ½ cup Bread flour, 2 tablespoon Organic cane sugar, 1 teaspoon Salt, 2 ¼ teaspoon Instant Yeast, 2 tablespoon Pumpkin seeds, 2 tablespoon Sunflower seeds, 1 tablespoon Flax seeds, 1 teaspoon Poppy seeds, 1 tablespoon Sesame seeds, 1 teaspoon Chia seeds
- Close the lid and select the "Basic" cycle, 1.5 lb size and the preferred crust setting.
- The bread will be ready once the cycle completes.
- Remove the loaf by inverting the pan and shaking it.
- Place the bread on a cooling rack and allow it to cool down.
- Once the bread is cooled down completely, slice it with a serrated bread knife or an electric knife.
Bake in the oven
- Place the wet and dry ingredients in the order as required by your bread machine. (Yeast to be added last)1 cup Water, 4 tablespoon Oil, 3 ½ cup Bread flour, 2 tablespoon Organic cane sugar, 1 teaspoon Salt, 2 ¼ teaspoon Instant Yeast, 2 tablespoon Pumpkin seeds, 2 tablespoon Sunflower seeds, 1 tablespoon Flax seeds, 1 teaspoon Poppy seeds, 1 tablespoon Sesame seeds, 1 teaspoon Chia seeds
- Close the lid and select the "dough" cycle.
- Once the cycle completes, remove the dough from the pan and shape it into a log of 8 inches in length.
- Place it in the bread baking pan (9 by 5 inches) and allow it to rise for about 45-50 minutes until it doubles in volume.
- Cover with a food wrap or a kitchen towel so that it does not dry up.
- Once it has doubled in volume, preheat the oven to 350°F.
- Remove the food wrap gently and then place the pan in the oven.
- Bake for about 20 minutes or until the crust is golden brown in color.
- Transfer it to a cooling rack and allow it to cool down completely before slicing.
Notes
- Sifting and weighing the flour helps make the bread soft. Sifting is optional, however, weighing the flour gives consistent results.
- Once the bread is baked, remove it from the container and place it on a rack to cool down. Leaving the bread in the container to cool down can make it moist.
- The recipe makes 1.5 lb. bread. To make 1 lb. bread change servings to 8 and for 2 lb. bread, change servings to 16.
- The dough can also be kneaded in a stand mixer and then proofed in the instant pot or oven for about 1 hour before shaping into a log.

This bread came out beautiful! I followed the recipe with the exception of I sifted the bread flour and was out of two of the seeds (sunflower and sesame). The bread came out light and airy and had risen so much it finished on the lid of the bread maker. After it cooled I had a buttered slice and will be making this often it was so good.
