    Strawberry ice cream is a perfect treat for the summer. This is an easy to make eggless, no-cook strawberry ice cream recipe for an ice cream maker.

    I have used Cuisinart ice cream maker but other ice cream makers will work well too. This homemade strawberry ice cream has a smooth and creamy consistency.

    What are the ingredients for strawberry ice cream?

    Homemade strawberry ice cream requires very few basic ingredients. This is a 4-ingredient strawberry ice cream using fresh strawberries. However, you can also use frozen strawberries after defrosting them.

    Milk, sugar, and heavy cream are the main ingredients to make creamy ice cream. The best part of making ice cream at home is you have control over the quality of ingredients. You can easily find substitutes like replacing sugar with another sweetener of your choice.

    Making strawberry ice cream at home is very easy especially with an ice cream maker. Depending on your ice cream maker, you may want to prep the freezer bowl by placing it in the freezer for about 24 hours.

    I have made this ice cream in the Cuisinart compressor ice cream maker but this can be made in other ice cream makers too by following the manufacturer's instructions.

    To make strawberry ice cream from scratch, blend the strawberries (fresh or frozen) along with milk, sugar, and a pinch of salt. Blend everything well until sugar is dissolved and strawberries are pureed.

    Now add in the heavy cream and gently mix it with a spatula, there is no need to blend the cream in the blender as the mixture will be churned in the ice cream maker.

    For best results, it is advisable to chill the mixture for about 2 hours before churning. Churn the mixture in the ice cream maker for about 25 minutes.

    After churning, the strawberry ice cream will be of soft-serve consistency. Freeze it in a freezer-safe air-tight container for about 5-6 hours before serving.

    How do you keep fruit soft in ice cream?

    To keep fruit soft in the ice cream, it is best to puree them by blending. If you add small pieces or chunks of fruit in the ice cream while churning then they will harden after freezing.

    You can always top the ice cream with some fresh fruit pieces while serving.

    How long can I store homemade ice cream?

    Homemade ice cream stores best for about a week. It can be stored longer up to a month however, you will see some icy crystals on top of the ice cream. But you can still enjoy it by scooping out the ice crystals.

    What to serve with strawberry ice cream?

    Strawberry ice cream is creamy and delicious by itself. You can enhance its flavor by serving it with some chopped strawberries, strawberry syrup, sprinkles, or whipped cream. One of our family favorites is to make the banana split sundae.

    You can also top it with some soda to make strawberry float. It is a great accompaniment to your meals for special occasions.

    Equipment

    • Ice cream maker
    • Vitamix or other blender

    Ingredients

    • ½ lb Strawberries (hulled, 1 cup pureed)
    • 1 cup Heavy cream
    • ½ cup Milk
    • ½ cup Organic cane sugar
    • 1 pinch Salt
    Prevent your screen from going dark

    Instructions

    • Blend the strawberries, sugar, milk, and salt in Vitamix until strawberries are pureed and sugar is dissolved. (Gradually increase Vitamix speed to 6-7)
    • Transfer the mixture into a bowl and add mix in the heavy cream with a spatula.
    • Refrigerate the mixture for 2 hours before churning.
    • Stir the mixture and transfer it to the ice cream maker bowl.
    • Churn the mixture for 25 minutes.
    • Transfer the strawberry ice cream to a freezer safe container.
    • Freeze the ice cream for about 5-6 hours before serving.

    Notes

    To make strawberry ice cream without an ice cream maker
    • In a high speed blender or Vitamix - blend strawberries, sugar, milk, cream, and a pinch of salt.
    • Freeze for about 2 hours.
    • Blend again and then freeze for 5-6 hours before serving.

      This was the best strawberry ice cream I ever had. Super quick and easy way to use up some strawberries before they went bad. I only churned it for about 15 minutes with the ice cream attachment for my kitchenaid mixer. Perfection.
