Air fryer whole potatoes are a delicious and healthy alternative to traditional oven-baked potatoes. They have a crispy outer layer and are fluffy from the inside.
They are gluten-free and vegan if you use vegan butter. Air fryer baked potatoes require less oil and cooking time, and you can enjoy them guilt-free treat anytime.
You can serve them with your favorite toppings such as sour cream, chives, cheese, or butter. They make a perfect side dish and can be served as a meal too! This is an easy air fryer baked potato recipe to make vegan and gluten-free whole potatoes with very little oil.

Instructions
To prepare air fryer baked potatoes, first wash and scrub the potatoes well to remove any dirt. With the help of a basting brush, apply some olive oil for a crispy outside layer. Sprinkle some salt for flavor.
There is no need to poke any holes in the potatoes. If you want, you can poke some with the help of a fork, but the potatoes will cook evenly and perfectly without poking holes.

Preheat your air fryer to 400°F and place the potatoes in the air fryer basket. Cook for 25 minutes, and flip the potatoes halfway through cooking. Once done, insert a knife or a fork to check if they are tender from the inside. Else you can cook them for a few more minutes.
Once the potatoes are fork tender, remove them on a serving plate and split them open. Fluff them with a spoon by scooping the inside gently.
Sprinkle some salt, pepper, garlic powder, chives, and slather a lot of butter. You can use vegan butter to make it vegan.

Substitutions
I have used medium size (8 oz.) Russet potatoes for this recipe. You can use large Russet potatoes (12 - 16 oz.). Yukon Gold potatoes or red potatoes can also be used for baking.
Serving suggestions
Air fryer baked potatoes are crispy from the top and served with the skin. You can eat the skin of the baked potatoes. While serving, slit the potatoes from the center along the length. Add some butter and sprinkle some salt, pepper, and garlic powder or chives.
You can also serve some sour cream on the top, add some pepper flakes, or some grated cheese. A little but of Italian seasoning, parsley, or oregano adds a lot of flavor.
Whole potatoes can be served with soups, salad, roasted vegetables, roasted mushrooms, pasta dishes or just by itself!

Equipment
I have made these baked potatoes in the 4 qt. Instant Vortex Plus air fryer. You can make them in any air fryer, an oven style or a basket type. The number of potatoes you can air fry at a time will depend on the capacity of the air fryer and the size of the potatoes.
For a crispy outer skin, you can apply olive oil with the help of a basting brush.
Storage
It is best to eat the baked potatoes once they are cooked. If you have any leftovers, you can store them in the refrigerator in an airtight container or wrap them in a foil.
When you are ready to eat, you can reheat them in the microwave or in the air fryer for 1-2 minutes at 350°F.
