Air fryer potato skin is a gluten-free side dish, appetizer, or snack. It is easy to make them at home from scratch with just a few ingredients. They are halved potatoes scooped from the center and loaded with a filling.
They can be prepped ahead of time and then air-fried just a few minutes before you are ready to serve.
The best thing about baking potato skins in the air fryer is that you don't need to preheat the oven, especially for a small batch and it takes much lesser time to cook.
These crispy air fryer potato skins are perfect appetizer for a Thanksgiving, Christmas, holidays, party, potluck, or any special occasion and are a true crowd-pleaser!

Ingredients
Homemade air fryer potato skins are made with only a few ingredients. I have used medium-size Russet potatoes but red or yellow potatoes can be used as well.
For seasoning, salt, pepper, Italian seasoning, and olive oil are needed but you can adapt it to add other spices like garlic powder, onion powder, or red chili powder.
For the stuffing, I have used some bell pepper, corn kernels, and cheddar cheese. Any color bell pepper can be used, just ensure to chop it into small pieces. To add a hint of spice, add some slices of serrano pepper or jalapeno pepper.
Instructions
The first step to making the best potato skins is to thoroughly rinse and tap dry the potatoes. This is required as the potatoes have a lot of residue on the skin and we are going to use the skin in the recipe.
After that, make a mixture of olive oil, salt, and Italian seasoning in a small bowl and coat it well on all the sides of the potatoes with the help of a basting brush. This will ensure that the air fryer potato skins turn out crispy from the outside.
Preheat the air fryer to 390°F and bake the potatoes for 30 minutes. Optionally, you can flip them halfway, but it is not needed. Before removing the potatoes, check for doneness with the help of a fork, if it slides in easily and comes out that would mean that the potatoes are well done.
Carefully remove the potatoes from the air fryer basket and allow them to cool down for about 10 minutes before cutting them into halves. In the meantime make a mixture for the filling by mixing chopped bell pepper, salt, and Italian seasoning.
Once the potatoes have cooled down, cut them lengthwise into halves and scoop out the potato flesh from the center depending on how thick or thin the potato skins you like.
Apply the olive oil seasoning mixture that you prepared earlier on the inside to ensure you get the flavor in every bite. Now fill the bell pepper and corn mixture, sprinkle some cheddar cheese, and optionally some serrano pepper slices on each of the potato skins. You can also add your favorite toppings.
Place the potato skins in the air fryer basket and cook for about 4 minutes at the temperature of 390°F. You may have to air fry in multiple batches depending on the size of your air fryer. Once the cheese melts and the bell pepper is well roasted, the air fryer potato skins are ready.
Substitutions
These air fryer loaded potato skins are vegetarian and gluten-free. If you are looking to make it vegan, sure you can make it as the only ingredient you need to substitute is cheese.
- Vegan - you can skip the cheese entirely or substitute it with a vegan cheese you like.
Variations
This recipe is absolutely versatile and you can make it in a variety of ways.
- Spicy - add some chopped serrano peppers or jalapeno peppers to the bell pepper filling. Also, once baked, sprinkle some red chili flakes to add spiciness.
- Filling - you can also stuff it with a mixture of some black beans, bell pepper, and onions. Or you can just stuff it with a variety of cheese!
You may also like air fryer whole baked potatoes and air fryer whole sweet potatoes.
Equipment
These potato skins can be made in an air fryer. I have made them in the Instant Vortex Plus air fryer. Depending on your air fryer it may vary how long you cook the potato skins in the air fryer. It may take a few minutes more or less to cook them.

Storage
These air fryer potato skins are absolutely delicious and best when served fresh. However, sometimes you may have leftovers, you can store them in the refrigerator in an air-tight container.
Refrigerated potato skins can be reheated in the air fryer at the temperature of 390°F for 1-2 minutes.

Air Fryer Potato Skins

Ingredients
- 4 count Russet potato
- 1 tablespoon Olive oil
- ¼ teaspoon Salt
- ¼ teaspoon Italian seasoning
For the filling
- ½ cup Bell pepper (chopped)
- ½ cup Corn kernels (defrosted)
- ½ cup Cheddar cheese (grated)
- 1 count Serrano pepper (sliced, optional)
- ¼ teaspoon Salt
- ¼ teaspoon Italian seasoning
Instructions
- Rinse and thoroughly clean the potatoes.
- In a small bowl, mix olive oil, Italian seasoning, salt, and garlic powder.
- Preheat the air fryer to 390° F.
- Apply the oil mixture to the potatoes using a basting brush.
- Place the potatoes in the air fryer basket and air fry for 30 minutes.
- Insert a butter knife to check if the potatoes are well done, else cook for another 3-5 minutes as needed.
Making potato skins
- Remove the potatoes from the air fryer basket with the help of kitchen tongs.
- Cut them into halves, lengthwise.
- With the help of a spoon scoop the potatoes depending on how thick you want.
- Apply the olive oil mixture to the inside of the potatoes with a basting brush.
- In a bowl, mix bell pepper, corn, salt, and Italian seasoning.
- Put the above mixture into the scooped potato skins.
- Sprinkle some grated cheddar cheese and optionally some serrano pepper on the top of the potato skins.
- Preheat the air fryer at 390 °F.
- Air fry the potato skins for 4 minutes at 390° F.
- Once the cheese has melted, the potato skins are done.
Notes
- You can sprinkle some red chili powder or pepper.
- To make it vegan, skip the cheese or use some vegan cheese.
