The best part of making hasselback potatoes is that it needs only a few basic pantry ingredients. I have used large Russet potatoes but medium or small ones will work fine as well. Other varieties like red potatoes or yukon gold can be used if you don't have Russet potatoes at hand.
For the seasoning, some olive oil, salt, black pepper, garlic powder, and Italian seasoning can be used. But don't limit yourself, you can adapt this to use fresh herbs like fresh parsley, rosemary, chives, or thyme. If you like it more buttery or cheesy, you can add some butter or cheese.

First rinse and pat dry the potatoes to get rid of any dirt or residue. Now place it in between two chopsticks, skewers, or wooden spoons and start slicing from one of the ends with a sharp knife.
While slicing, you need to ensure that you are not cutting it through and the chopsticks or skewers will help in avoiding that. Continue slicing the potatoes about 3-5 mm thick leaving ensuring there is some space at the bottom.
How to cook hasselback potatoes in air fryer?
Hasselback potatoes turn out perfect in the air fryer. They are crispy from the top and soft inside. Once you have cut the potatoes, place them in a 390 °F preheated air fryer for 5 minutes. This helps the potato slices to open up and it becomes easy to apply the seasoning mix.
While the potatoes are cooking, make a seasoning mixture by mixing oil, salt, garlic powder, Italian seasoning, and pepper in a small bowl. I have not used any butter, but if you like, you can use some, and to keep it vegan, use vegan butter.
Open the air fryer basket and apply the seasoning mixture with the help of a basting brush between the slices and on the top of the potatoes. Close the basket and air fry the hasselback potatoes for an additional 20 minutes.
Check the potatoes with the help of a fork for doneness. They should be fork-tender. If needed, cook for an additional few minutes.
Optionally, apply more seasoning mixture or sprinkle some Italian seasoning or garlic powder on the top before serving.
How long to cook hasselback potatoes in air fryer?
The time it takes to cook the hasselback potatoes in an air fryer depends on how large the potatoes are. For large potatoes, it can take about 25-30 minutes. For small or medium size potatoes, it can take about 15-25 minutes.
The total time will also depend on how thick the slices are. For thin slices, it takes less time whereas thick slices can take a little longer. Also, the time may vary a little based on the air fryer brand.

Tried these with gammon and slow cooker red cabbage- absolutely lovely. I microwaved miniature potatoes of similar size for a good 5 minutes after slicing. They took about 15-20 to become tender and crisp up in the air fryer. Great new recipe for potatoes in our house!
