It is really very easy to cook the beets in the air fryer and the only challenging part may be to cut them. First, cut the ends of the beets with a knife and then peel the skin off with the help of a vegetable peeler. Now cut the beets into chunks of about ¾ - 1 inch size.
In a mixing bowl, mix the cubed beets with oil, salt, and some rosemary. You can use fresh or some dried rosemary. I have made these golden roasted beets in the Instant Vortex Plus air fryer. Preheat the air fryer to 390 °F. Place the seasoned beets in the preheated air fryer evenly and cook for 15 minutes.
Open and shake the basket after about 8 minutes to ensure they are being cooked evenly. Continue air frying the beets for the remaining time and then check for doneness by inserting a fork in one of the pieces. The fork should slide in easily and that is a sign that the beets are roasted well in the air fryer.
Personally, I like to add the pepper after roasting and once the beets are done, sprinkle some black pepper as per taste. But it is completely optional and you can skip adding any pepper. Transfer the roasted beets to a serving plate and enjoy!
