This is a 5-ingredient no-cook vanilla ice cream made without eggs. This homemade ice cream is made from scratch with milk, heavy cream, sugar, salt, and vanilla extract.
I like to use whole milk for creamy ice cream. If you use 2 percent or skimmed milk then the ice cream will not be as creamy.
You can substitute sugar with a low-calorie sweetener or a sweetener of your choice.
How to make creamy homemade ice cream?
Practice makes a man perfect and that is equally true for making homemade ice cream. After a lot of tries and making lots of batches of various ice cream, I have learned that to make a no-cook, no-egg creamy homemade ice cream it is a must to whisk or blend all the ingredients well.
Milk, sugar, and salt must be blended well until all sugar is dissolved. If this step is not followed or skipped then the ice cream will turn hard and rocky after freezing.
How to make homemade vanilla ice cream?
Some recipes call for cooking the ingredients but personally, I find it very time-consuming and tedious. I love making no-cook ice creams and that too without eggs.
To make vanilla ice cream at home, you will first have to freeze the ice cream maker bowl if you use the one which comes with the freezer bowl.
I have made this vanilla ice cream recipe in the Cuisinart compressor ice cream maker.
The next step is to blend milk, sugar, and salt until all the sugar dissolves. For best results, it is recommended to use chilled milk and heavy cream.
Now mix the vanilla extract and the heavy cream with a spatula and chill the mixture for at least 2 hours before churning in the ice cream maker.
How to make vanilla ice cream in ice cream maker?
The ice cream mixture must preferably be chilled for at least 2 hours before churning it in the ice cream maker.
Before pouring the mixture into the ice cream machine bowl, stir it to mix it well. Pour it in the ice cream maker bowl and churn the ice cream for about 35 minutes.
Once the ice cream is churned, it will be of soft-serve consistency. You can eat it if you enjoy the soft consistency.
Freeze the ice cream in a freezer-safe air-tight container for 5-6 hours to get a creamy scoopable consistency.
How long does it take to make homemade ice cream in an ice cream maker?
It can take anywhere from 25 to 40 minutes to make homemade ice cream in an ice cream maker. It depends if all the ingredients are chilled, the freezer bowl is chilled, and the quantity of the mixture.
Depending on your ice cream maker you may have to freeze the bowl for 24 hours. If you are using a compressor one then it is best to chill the bowl for 5-10 minutes by running the machine on the cooling setting.
Add the ice cream mixture to the chilled bowl and churn the ice cream. This helps in churning the ice cream faster.

- 2 cups Heavy cream
- 1 cup Milk (whole)
- ⅔ cup Organic cane sugar
- 1 teaspoon Vanilla extract
- 1 pinch Salt
Instructions
- In a mixing bowl, add milk, sugar, and a pinch of salt.
- Whisk on low speed using the whisk attachment of a hand blender or stand mixer until all the sugar is dissolved.
- Add vanilla extract and heavy cream.
- Mix well with a spatula or a spoon (do not whisk).
- Optionally, chill the mixture in the fridge for about 1-2 hours.
Churning vanilla ice cream in ice cream maker
- Stir the chilled mixture before pouring it into the ice cream machine bowl.
- Start the ice cream machine and churn the mixture for about 25 minutes.
- Ice cream will be of soft-serve consistency.
- Transfer the ice cream to a freezer-safe container.
- Freeze it for 5-6 hours before serving.
Notes
- This recipe makes 1 quart ice cream.
- If you are using a compressor ice cream maker, you can pre-cool the bowl for 5 minutes before putting the mixture.

To make the vanilla ice cream in a blender you can put all the ingredients in the blender and blend it. Start with low speed and gradually go to high speed until it becomes thick and creamy. Depending on your blender it can take 30 seconds to a minute to blend the mixture. Transfer it to a freezer safe container. Optionally after 4-5 hours you can blend it once again for only a few seconds.
While making the ice cream in the blender you have to be careful not to over blend it else the heavy cream will release butter and you will have a buttery taste in your mouth. Also on freezing, it will be harder compared to the ice cream churned in an ice cream maker, so you can leave it on the counter for a few minutes before scooping.
